A theory is a scientific proposition that EXPLAINS the behavior of a phenomenon. I.e. Why the moon will be at the position it will be at midnight.

Evolution explains why and how life evolves.
However you CAN NOT predict how an orgnaism will evolve so there never will be a law of evolution.

* Over 99.8% of scientists in relevant field accept evolution.
* There are no alternative scientific theories.
* There is a huge amount of evidence in support of evolution...
* And zero evidence against it.
* The 'discussion' is actually educated people trying to educate others.

Every single thing is basically a theory now. A scientific theory is almost a law. Things like evolution and such can not be a law ever, even if they were directly observed. It'll most likely stay a scientific theory no matter how much bad mouthing it gets from uneducated, home schooled creationists.

it's a scientific theory, which is different from a normal theory. Scientific theories have proof, normal theories are just....theories...
sorry, just noticed your detail : living fossils have evolved slightly, but they're remaining mainly the way they were because that shape/build is good for survival. They're still evolving, too.

Every creature you cited does evolve. The fact that overall forms are preserved does not mean that the ancient forms could be confused with the modern forms.

No, primarly because you entire premise is off.
All the animals you have metioned have, and do evolve. Some animals simply evolve at slower rates than others.
How evolution happed and is happening is a theory. The fact that it did happen and is happening is a fact.
