Amazing how the meaning of words change. I am 60 plus and when I was learning to cook a clove of garlic was the entire bulb. A segment of garlic was a toe of garlic.

Until today, i always thought that a clove was the whole thing so that is how i have been cooking. Everybody always compliments me on my dishes that include garlic so i guess i will continue to put in too much..

Glad I found this discussion; it answered a question in my mind. My cooking experience is limited but when I read a recipe for Sauteed Garlic Asparagus that called for 3 cloves of garlic, I thought that surely could not mean 3 whole garlic heads, a term I just now learned. Amazingly, the local supermarket (Kroger) has garlic mis-labeled. When I recently bought raw garlic for the first time, they had it priced at "2 cloves for $1". But, as I now know, the price should have been stated as 2 heads for $1. This could lead to some undesired cooking results for newbie cooks; using a whole head instead of a clove could be a smelly ordeal, to say the least.

A clove of garlic is a segment. Be careful when taking the skin off, because it can be unpleasant to eat.
