Hi there, I'm having some friend over on sunday for brunch and i will like to make/cook something simple but very special.

Any ideas? like where to go on the web and get info?...i checked Food Network and didn't get to much help ....I have a good amount of stuff i can cook but all heavy meals, don't have a clue for a brunch?....i never cook brunch before.

Any input i'll appreciated. Thanks.

I got this email the other day & it looks good

ZIPLOC OMELETS
This works great !!! Have guests write their name on a quart-size Ziploc freezer bag with permanent marker.
- Crack 2 eggs (large or extra-large) into the quart size Ziploc bag (not more than 2) shake to combine them.
- Put out a variety of ingredients such as: cheeses, ham, onion, green pepper, tomato, hash browns, salsa, etc.
- Each guest adds prepared ingredients of choice to their bag and shake.
- Make sure to get the air out of the bag and zip it up.
- Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water.
- Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.
- Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece.

Imagine having these ready the night before, and putting the bag in boiling water while you get ready. And in 13 minutes, you have a nice omlette for a quick breakfast !!!

Serve w/ assorted fruit, breakfast pastries, potatoes, some type of protein & a salad maybe

How about a breakfast casserole (recipe below) and some fruit salad?

I usually make fruit salad with cantelope, strawberries, pineapple, kiwi, and blueberries. The juice from the pineapple sweetens it up. My friends and family love it!

BREAKFAST CASSEROLE

1 1/2 pounds sausage
6 slices bread, cubed
1 1/2 cups shredded cheddar cheese
6 eggs
1 teaspoon salt
2 cups milk
1 teaspoon dry mustard
4 ounces mushroom pieces, drained
1/4 cup green bell pepper, diced
1/4 cup green onion, diced

Brown sausage, drain. Layer bread in bottom of 9 x 13-inch well-greased baking pan. Sprinkle sausage over bread. Add cheese. Beat eggs and mix with remaining ingredients. Pour slowly over cheese. Refrigerate overnight. Bake at 325 F. for 45 minutes.
Note: Other ingredients may be added or substituted for the vegetables.

Serving Size: 8

What I like to do (and I DO like the farmers casserole-- your first entry ) is to make fresh scones, fresh fruit salad, heat up those smoky mini franks, slice up some cheeses and serve it with coffee, tea, hot chocolate or just o.j. You are set to go and enjoy! It doesn't have to be a big production, just use nice service pieces and set a pretty table. Have fun!

Yeah! Brunch is Fabulous!!!

Sabayon is fabulous! and looks really good lyered with fruit in goblets or champagne flutes :)
5 large egg yolks
1/2 cup sugar
1/4 cup Champagne
1/4 cup clear raspberry brandy
1 1/4 cups chilled whipping cream

2 1/2-pint baskets raspberries or sliced strawberries

Whisk first 4 ingredients in large metal bowl. Set bowl over saucepan of simmering water (do not let bottom of bowl touch water). Using electric mixer, beat mixture until very thick and thermometer registers 160°F., about 12 minutes. Remove bowl from over water and set in larger bowl of ice. Let cool completely, whisking occasionally.
Using electric mixer fitted with clean beaters, beat cream to firm peaks. Gently fold into egg mixture. Chill sabayon until cold, about 1 hour. (Can be prepared 6 hours ahead. Cover and refrigerate.)
Divide raspberries among 4 bowls or stemmed goblets. Spoon sabayon over raspberries and serve immediately.
Use the remaining champagne for mimosas!

Maple French Toast Bread Pudding:
12 ounces challah or other egg bread with crust, torn into 3/4-inch pieces (I have used stale french bread, it's fine)
7 large eggs
2 1/2 cups whole or reduced-fat (2%) milk
1/2 cup sugar
2 teaspoons vanilla extract
3/4 teaspoon freshly grated whole nutmeg or ground nutmeg
1/2 cup chopped toasted pecans
Warm maple syrup
Butter 11x7x2-inch glass baking dish. Place bread in dish. Whisk eggs and next 4 ingredients in medium bowl to blend; pour over bread. Using spatula, lightly press down on bread to moisten completely. Cover with foil and chill overnight.
Place foil-covered dish in cold oven. Set oven at 350°F and bake 30 minutes. Remove foil and continue to bake until pudding is puffed and golden brown, about 35 minutes longer. Spoon pudding onto plates, sprinkle with toasted nuts, and serve with warm maple syrup.

Shrimp and chorizo omlet:
I use chilled cocktail shrimp, cut into small bite sized pieces.
remove chorizo from skin and brown, breaking up the meat.
1sausauge for 4 ppl
Remove meat, leaving oil in the pan for eggs
I use 2 eggs per person, salt & pepper...
after the first flip, while eggs are still in the pan, place a 1" thick strip of cream cheese down the middle of the omlet
top with corizo and shrimp
Carefully fold omlet and slide onto plate
top with diced tomatoes and scallions if desired :)

Super easy stuffed mushrooms
Garlic and herb Boursin cheese
1 tablespoon bread crumbs
combine
stuff mushrooms
top stuffed mushrooms with bread crumbs
bake @ 425 for 5-10 minutes, until top is just browning, don't let the musrooms get brown.

Black Pepper Boursin is great served on fresh pear slices.

Fresh vegetables served with favorite dip

Easy chocolate fondue:
1 bag semi sweet chocolate
1 can sweetened condensed milk
juice from 1 jar of marichino cherries
melt chocolate and sweetened condensed milk in the microwave for 1 minute. Let sit for at least 5 minutes, remove from microwave, add juice and stir until smooth. serve immediately with fresh fruit and berries!

deviled eggs (even though I hate them myself lol), sliced peaches, and some champagne mixed with orange juice.

depending on how old both of you are, you can make mimosas (champagne and orange juice) as your beverage.
