Swiss makes a good grilled cheese sandwich, too, depending on what kind of bread you're using.
One shouldn't snub a cheese just because it's popular. The reason it's popular, after all, is because people like the taste.

I use a slice, sometimes two, of Kraft american cheese to make grilled cheese sandwiches.

I usually make them with American singles. But sometimes I spread a little pesto on the bread and use provolone. Cheddar just doesn't melt right unless I put it in a panini grill.

It's traditionally made with American cheese. That's how I like it. Some people mentioned cheddar, but to me, cheddar doesn't melt well and gets sort of gross looking when it starts to set after being melted. American melts much better, but choose whatever cheese you like!

American cheese is the most commonly used... but I like Colby Jack or if you want to "fancy it up" try using provolone and you could even add a few slices of bacon to it.
