Vegetable Frittata

(4 servings) Printable Version


2 tablespoons margarine
1 bag (16 ounces) frozen Mixture Broccoli Corn and Red Pepper
1 1/2 cups liquid egg substitute
1/2 cup water
1 tablespoon Tabasco pepper sauce
3/4 teaspoon salt
Melt margarine in 12-inch non-stick skillet over medium heat. Add vegetables; cook and stir 3 minutes.

Lightly beat eggs, water, Tabasco sauce and salt.

Pour egg mixture over vegetables in skillet. Cover and cook 10 to 15 minutes or until eggs are set.

To serve, cut into wedges.

Some people drink tomato juice for breakfast, or V-8 juice.
I can't think of a vegetable you eat at breakfast, unless you include grains like corn or rice as a vegetable which would bring in grits, corn flakes, and puffed rice, but in nutrition that's not vegetables, its bread & cereal group.

Tomatoes are a fruit, and only considered a vegetable by the US for tariff puposes.

I would go with carrots or zucchini. Of course the best way to get that start is with a couple of fruits (apple or banana).

potatoes are good to eat for breakfast either as fried potatoes, hashbrowns or mashed potatoes. You could also add bell peppers and onion to eggs and make an omlet. If you eat muffins, you could try grating some carrots into the batter. You could make pumpkin bread and substitute it for toast.

Just about any veggie you like can be thrown in with eggs for a scramble. I like spinach, mushrooms, bell peppers, onions and tomatoes. Just saute the vegetation for a few minutes then pour in scrambled egg and cook! Delish!

Omelet with mushrooms, green onions, bell peppers, red onions & jalapeños with salsa poured over the top would be healthier and delicious also. Tomato is a technically a fruit but I gotta have it on my omelet! Heck you could put Asparagus, Spinach, Avocado or anything you want to in there!!!!!
Hashbrown potatoes!!!!!!!!!! It's probably not the healthiest choice but it I LOV EM!

Tomatoes, green peppers, musrooms, red peppers, onions....all of these taste incredible in an omelette or mixed in with scrambled eggs. If not that, grilled by themselves as a side to eggs, toast, hashbrowns, bacon or sausage, etc.
