I noticed that all the recipes say to use celery - but I am out -

but if I boil - carrots, onion, garlic, and some thyme and basil and some salt and pepper - will this make a good stock - or do I need to add something to it?

I just need a quick stock to add to some bean soups..

I think you can make a nice stock with the ingredients you mention.

Yes. In this case, the celery can be left out, provided that you use alll of the other things that you mentioned. Although celery often shows up in many stock recipes, it, like many other ingredients, is not absolutely necessary. The Chinese are experts at substitutions in their stock as well as adding and subtracting ingredients. I personally have added herbs such as dill and parsley to my stocks and they have always turned out well.

The entire idea behind stock is to obtain a flavorful liquid to use as a base. What ingredients you use are entirely up to you.

P.S. You might want to be careful with salt though. In some cases, it can become a liability. Roughly half of professionals would suggest that you leave it out, while the other half would not be caught dead without it in their own stock recipes.

that will work...do u have celery seed? a nice chicken stock works well with bean soups too.
The best is pork or ham stock for bean soup. Boil the crap out of a ham bone and there ya go!.

You can leave the celery out, but I'd add a bit extra salt. since celery has salt in it. And instead of normal pepper, use black peppercorns if you have them, a couple bay leaves, and minced garlic. It'll turn out great.

yea thats good. when i make a vegetable stock i put carrots, onion, tomato, potato, and celery, maybe i will put a little garlic depending on how i feel about it goin in. the some pepper and oregano to season. so what you got is really good

That will be fine for your needs. If you have celery salt, substitute that for some of the salt you would add, to give the celery flavor.

I agree with the others, add cellery seed-or celery salt in place of regular salt. I dont always keep celery because it isn't liked by everyone in my family. it adds some flavor, but not the nice yummy chunks of celery...

any aromatic veggie is good for stock
