try to add a little more milk to it. Also, you can put chunks of butter on top when it's done, let it melt, and then sprinkle a little bit of powdered sugar. Yum!

corn bread is typically dry be nature but here is a sweet version that is fastr and easy and makes a wonderful variation. You can also substitute one of the eggs for 1/4 cup mayonnaise, it does wonders to the moisture! Jiffy Corn Light Bread Take one regular size yellow cake mix and 2 Jiffy cornbread mixes. Mix the cake according to the directions on the box and the cornbread mixes according to their directions and combine. Makes a huge loaf in a 12 inch oven. For a smaller amount, use 1 Jiffy cornbread mix and 1 Jiffy yellow cake mix. That would be the equivalent size of 1 regular cake mix for a 9 by 11 pan or small DO. There's never a crumb left when I make this for one group or another.

Don't use the box! Make your cornbread from scratch. All you need to buy is corn meal, and the recipe is right on it. It's made with baking powder, sugar, flour, salt, egg, milk, oil, cornmeal, and I think that's all. Sometimes I use buttermilk instead of milk, and I add honey. Also corn bread is best when made the same day. It dries out after a day or so. You can reheat pieces in the microwave for about 10 seconds to soften it up for eating after that.

One of two things...add some creamed crushed corn to the mix or sour cream for some of the liquid. Adding butter or oil will make it more cakelike.

if your using jiffy it calls for 1/3 cup of milk and it needs to be 1/2 cup it will be fine then
I make this all the time this is all it takes just more milk thats all

Add a box of jiffy yellow cake mix (plus the ingredients on the jiffy box). Mix as usual. It will come out cakelike and very much like restaurant like.

The magic ingredient to any corn bread, a mix or scratch, is buttermilk...always use buttermilk and cook in an iron skillet in the oven...you will never do it any other way once you have tried this..

Either cover it with aluminum foil (loosely) for most of the cooking time to retain moisture OR add a teaspoon of Natural applesauce to your mixture.
