My cats love the bath tub, too. And, although it is true that most cats hate to get wet, they are fascinated with water.
Back to the tub -- it is perfectly sized play pen for cats! It has a nice high back, it has a cool surface. And it has lots of items to knock over -- I mean play with! : )
About the water dishes. You can get one that doesn't tip over very easily -- they don't have to be big or heavy -- just designed right. (Bottom wider than top and perhaps a rubber bottom.)
Don't be surprised when you find them washing their toys in their water dish! lol Sounds as if your cats are water lovers like mine! : )

Because cats are weird. I have no idea! My cat hates water. Hates it. Hates it. Hates it. Yet, there are times when she will jump into the wet bathtub after I'm done with my shower. She ends up jumping out and running as if her little kitty butt is on fire because, did I mention, she hates water. :) Then there was also the time she drank using her paw. She would dip her paw in the water and lick the water off her paw. This didn't last long. I have an idea why she may have been doing it, but I'm not sure. I just chalk it up to cats are quirky, and that's why we love them.
My aunt's cat has a habit of pawing at her water dish, but we have no idea why. She paws at the edge a little in between drinks. I would go with the suggestion of a heavier dish and something not very tall as a dish - less leverage to tip it over.
There are a few breeds that do like water, so that could be another answer. I would keep the toilet down so they don't fall in if they decided to check that out too. Animals have been known to drown from falling while trying to take a drink.

I have a 18 month old cat that we have had since 8 weeks and we always thought that if he did something he shouldnt do we would use the spray bottle and squirt him - NOT. He loves the water also. When my daughter showers, he gets on the edge of the tub between the two curtains and sit. When she gets out, he drinks the water dripping from the facuet and sitting in the soap dish(no soap in it of course). He likes to watch the water go down the drain and then sits and waits for my kids to put a small dixie cup of water in the tub - he drinks a little and then puts his paw in it and then tips it over and watches it drain - strange and cute.

Mine did that at that age, too. I don't know, I think 'cuz it's a small space and slippery and fun and there's lots of stuff to get into and explore. Mine used to like to tear up my shower scrubby-thing and knock over all the bottles on the edge of the tub. They also still like to walk on the edge, between the curtain and the liner in an attempt to hide from the other one. His brother will walk by the shower and the hidden cat will jump out and scare the crap out of the other and that sets off a ruckus of running and play-fighting.

Several of mine rush into my shower stall to check out the water droplets. It is just one of those things.
For the water dishes, I suggest you switch to some glass baking dishes that are small, low, and heavy. They are less likely to be able to be tipped. A fountain is also a suggestion to see if they like to drink from running water.
Mine tipped the small glass bowl, and I discovered that when they bumped it, it set up a ripple and that ripple reflected on the wall. Bump harder, and the ripple is a larger reflection. Bump really hard, and you then have water to play with on the floor. A baking dish solved that.

Outstanding question.
It's the texture of the tub. Like an ice skating rink, cooler than carpet, carries your scent in the pores of the material. Just a different surface than tile, linoleum or carpet.
As far as turning over the water dishes, think of a small kid during their destructive phase. Doesn't really matter if they're destructive to them. They're impacting their environment.

I have had many cats and only one has ever done this. When he was a baby he would get in the tub at night and use the soap bar as a hockey puck. It would keep him busy for hours.

It's a mystery to me! Most cats hate water. I have a 1 yr old cat and 9-wk old kitten. They avoid it at all costs, except to drink. But obviously you need to get heavier water dishes. Or better yet, get those water dispensers with the upside-down bottle on top.
