to protect their face. It keeps stuff from going in. Petroleum jelly is an oil based product so it is waterproof so it kinda works like a band-aid over the cut. A band-aid wont last long so the petroleum jelly is used.
It also helps the opponents gloves slide of their face better.

To add on to what the first answerer said, it also helps do deflect shots. If you punch my face, and my face is greasy like that, I need to move alot less to get that glove to slide off of my face instead of getting a direct impace. They like to jam it in cuts and up noses and stuff too because it controls bleeding for a little while. Also, it is sometimes used to get you a little extra rest time between rounds. More than once I have seen Oscar De La Hoya have WAY too much vasoline on his head. The referee will say "Go back to your corner and take that **** off." So in the time they take that off, he gets more rest. That is just plain cheap though, it's not like the cornermen can't tell how much to put on. What I wonder though, is wouldn't that give some people pimples. Even after you wipe it off and shower, there is still that residue. Hope that is a little more thorough for you :)

im Not a boxing fan but my boyfriend is and i used to wonder the same thing. boxers put the vaseline, or patroleum jelly on there bodies and gloves so that when you get hit the glove just slides right off of your skin or face or wherever they hit you. you know cause plastic against skin kind of sticks togather so they need something to make it slippery.
