Risotto would be an easy option. There are loads of variations, but these recipes show some good ideas

I would substitute the butter for olive oil, leave out the wine if it is a problem, and put a block of parmesan and a grater on the table (Jamie Oliver style) for guests to help themself. You can easily get wheat/gluten free stock from the supermarket.

You can use any vegetable, fish or cooked meat you like - but pre-cook meat before adding it. My personal favourite is dried wild mushrooms, although seafood is normally served without parmesan as standard.

Lots of things you can fix. Any kind of meat that you don't bread. Fish, chicken, beef, etc. Any kind of veggie sauteed in oil with garlic and onion. You can put margarine on the veggie or baked potato if they don't eat butter (dairy). A nice fruit salad of mixed fruit. A salad made of anything and a vinaigrette dressing.

See, not hard. And, for those that eat wheat, dairy and sugar, you can have bread.

When you want to cook a meal for friends you want to cook for all your friends and if you know a friend can't eat certain things you still want them to feel part of the group.

My friend had a friend of the family that could not eat onions so we made food that did not have onions and some with onions.

personally....i wud get them to bring their own dinner....dinner parties are difficult enough without a friend like that....
