I,m assuming you are asking about "suggestive selling". Judging by what is ordered, offer up an item that goes along well, and make it sound yummy. If somebody orders a chicken snack you might ask "would you care for a hot side of spicy potato wedges with that?" or "would you like an ice cold soda with that?" or "how about a slice of fresh strawberry pie today?" Emphasize your descriptive words.
Make a point to offer something extra to every customer. Always, always sound sincere!, mechanical selling doesn't work.
Also, talk up latest specials, customer love it when you save them money. "We have a special this week, for just a dollar more you can add a side of your choice and a drink."

Depends on what side orders. Like if it's hashbrowns, ask if they'd like cheese, sauteed onion, sauteed mushrooms, and/or green peppers on them. If it's an appetizer, upsell cheese sauce or ranch for dipping. Would you like extra dressing/sour cream with that?

It's amazing what the power of suggestion can do.

"sell up" an English expression? I don't know what it means.
