Here's the recipe my family uses. My grandmother use to make thses in the summer. Mmmmmmm !
Granny's Tomato Pie
2 cups shredded mozzarella cheese
10 to 12 basil leaves ( I use fresh from the garden)
12 4-inch individual pie shells (or one 9-inch shell)
6 to 8 fresh ripe tomatoes
6 slices bacon
1 tablespoon garlic salt
1/2 bunch green onions
2 cups mayonnaise
Fry bacon, drain, chop finely and reserve.
Peel tomatoes, slice thinly and place on paper towels to drain. Sprinkle with garlic salt.
Combine mayonnaise, cheese, green onions, salt and pepper for the topping and reserve.
Cook pie shell or shells according to directions.
In each cooked pie shell, layer the tomatoes, bacon and basil.
Cover completely with the topping.
Bake at 375 degrees for 30 minutes or until lightly browned.

4 tomatoes, peeled and sliced
10 fresh basil leaves, chopped
½ cup chopped green onion

1 cup grated cheddar
1 cup mayonnaise
salt and pepper
Preheat oven to 350 degrees.
First, blanch the tomatoes and slice. Place the tomatoes in the collinder to drain.
Using a medium sized bowl, mix mayonnaise, cheddar cheese, mozzarella cheese, salt and pepper.
Layer the tomato slices, basil, and onion in pie shell. Season with salt and pepper. Spread the mayonnaise and cheese mixture on top of the tomatoes and bake for 30 minutes or until lightly browned.
To serve, cut into slices and serve warm.

1/4 cup grated Parmesan cheese
2 teaspoons garlic powder
salt and pepper to taste
PREPARATION:
Sauté onion in margarine until translucent. Arrange tomato slices in the baked pie shell; top with onions. In a small bowl, combine mayonnaise, Parmesan cheese, garlic powder, salt, and pepper. Spread a thin layer of mayonnaise mixture over the tomatoes and onions.

I've never heard of a tomato pie. Tomatoes have a tendency to soften and disintegrate when cooked, so baking them in a pie would not hold. It would come out as sauce. They're too savory to go well with a firming custard.

Well
If I was stranded for weeks on an island and there was NO food to be had save for a tomato pie I probably would be forced to eat it, but I would wait several weeks.

Yeah, I did. I ate it too, looked too good to just sit there, plus I like the gritty feeling it made on my teeth. Gross, huh? They are still lined up on the stone fence at the place I made them...wow...that's old.
