There is a great dip made with chili, cream cheese, and cheddar cheese. Spread softened cream cheese on the bottom of a dish. Top with chili, and sprinkle shredded cheddar on top. You can broil or microwave until the cheese is melted.
You can also whip up a batch of corn bread and serve your chili and corn bread as another meal.
Throw some frito chips into the chili and top with sour cream and cheese. That is sort of like a frito pie.
You can put the chili on baked potatoes with cheese and sour cream.
You can use chili with anything! :) I love my homemade chili, and since the weather is cooling off I just might make it!

If it's a meat-only chili (no beans), you can freeze it and use it later for chili-cheese nachos (add chili to Velveeta or Mexican Melting Cheese and salsa), or for another night of chili dogs in the future. You can add beans to it and eat it by itself. Chili freezes well for a long time, and is versatile. A lot of the recipes or ideas others have mentioned here all sound good. You can also make burritos or enchiladas with the chili. Add a bit more ground beef to thicken it up, and maybe a packet of taco seasoning mix (optional).

For tonight, we're having leftovers of the hamburgers, hot dogs, pasta salad, potato salad, rice & beans, and corn on the cob. Anything that is left over after that, I am putting in these boxes I got from a local church, they're like plates, you put the food in, then cover them, then you put plate in a plastic bag, and give back to the church. Then, they give them to the homeless and hungry. I'm not very religious, but I thought this would be very kind to do. Also, I'm going to send some leftovers next door to our neighbors. They went out to eat for Memorial Day, so they didn't get that good ol' bbq cooking. And, if you don't want to donate the food, you can make hot dogs (chopped up) with some baked beans.. with the chicken you can do chicken fried rice, chicken salad, or chicken sandwiches!

Really?! Left over hot dog chili? How does that happen? Oh, well... I guess you could serve it over spaghetti with loads of cheese and onions. Or, you could serve the chili over some hash browns top it with eggs (over easy) and salsa, it makes a great breakfast. Just a couple of my favorite thing to do with chili (Besides chilidogs of course).
