If you're talking literally, they didn't evolve. They were crafted.

Figuratively, however, I like to think that evolution comes from necessity. Some of the pumpkins needed to evolve, and did so. But other pumpkins might have been perfectly content, and remained pumpkins.

Amongst other things evolution is a result of genetic changes as a result of enviromental stimulus. Creating a jack o lantern is not in itself creating a genetic change and therefore your assumption that they "evolved" is incorrect.
