Easy Chicken and Dumplings
Introduction
This is a great cold weather meal and one that everyone will love. Steaming the dumplings keeps them light and fluffy.
Ingredients
4 pounds chicken parts, legs, breast or thighs
1 teaspoon sea_salt
2 to 3 large carrots,sliced
2 Ribs of celery, sliced
1 Onion , diced in large dice
2 to 3 Chicken bouillon_cubes or 2 tsps chicken_stock granules
1 tsp poultry_seasoning
1/4 cup butter
1/4 cup flour
Sea_salt and freshly ground black pepper to taste
For Dumplings
2 cups Bisquick
3/4 to 1 cup milk
Note: Frozen peas and carrots can be used instead of the carrot and celery.
Directions
Step: 1 Place chicken in large pot with 1 teaspoon salt. Cover with just enough water to cover and bring to a boil. Simmer until chicken is tender. Remove chicken from pan and set aside.
Step: 2 Add chicken bouillion or stock base and poultry seasoning to the broth in the pot and stir until combined. Strain stock and measure .Add more water to make 4 cups. Add carrot, celery and onion and cook 15-20 minutes until carrots are tender.
Melt butter and stir in flour until mixture is smooth. Cook a few minutes until a very pale golden color. Add the roux to the chicken stock Simmer 5 minutes, stirring constantly until sauce is smooth and has thickened .Add salt and pepper to taste.
Step: 3 For dumplings, combine Bisquick and milk to make a soft dough. Place about 1/2 inch water in a large saucepan or pot, with a wire rack that comes 2 to 3 inches above the water line. Butter a cake pan or pie plate that will fit in the pot. Drop the dumplings into the pan, leaving a little room for expansion. Place the pan of dumplings on the rack and cover the pot .Bring the water to a simmer and steam about 10 minutes until the dumplings are light and fluffy..
Meanwhile, remove skin from cooked chickens and bone, if desired. Cut in large pieces. Place chicken pieces in casserole. Arrange dumplings over chicken. Cover with sauce.

Cook "Piadinas" it is an Italian dish, and it is simply amazing!!! Once I went to an Italian restaurant and this was the first dish, we gave it a try and we loved it!! I couldn't find the recipe, so as I knew about the ingredients I tried to cook it at home on New Year's Eve!! It was lovely!! as good as at the Restaurant! I've cooked it a few more times after on weekends away with friends and they loved it!!! they didn't expect they tasted that good!! really yummy!! and it is a really cheap dish, you just need to heat in the oven some Mexican tortillas, at the same time you have to cook a white sauce made with flour, oil and milk, add a bit of fried onion, some canned mushrooms and cut 4 slices of bacon. Then you put the result in the tortillas, you add cheese powder, close the tortillas to make a wrap and put them for about 2 mins in the oven. Then they are ready to eat!! you dip them in mustard and god...you go directly to heaven!! My mouth is watering right now!! I hope you try my dish and your boyfriend loves it!! If you need more help with desserts or something just ask!! I know how to cook brownies! people love them!! I've even received marriage proposals when guys have tasted them!! lol!
P.S: Sorry I forgot to tell you that you had to put the Piadinas in the oven wrapped in Kitchen foil!!

My suggestion: spaghetti - try this recipe:
Spaghetti with Shrimps
9 ounce Spaghetti
7 ounce medium shrimps peeled and deveined
11 ounce cherry tomatoes, make a cut but not so deep enough to separate it into halves
5 large cloves garlic, sliced
4 tablespoons olive oil
5 ounce arugula
1 ounce fresh basil leaves
salt and freshly ground pepper to taste
- Cook pasta in a large pot of boiling lightly salted water until al dente.
- Meanwhile, heat olive oil in a large non-stick frying pan, stir in garlic for 2 minutes, add shrimps, salt and cook them for 3 to 5 minutes or until they turn red. Remove with a slotted spoon and and set aside. Leave the garlic in the frying pan.
- Add in the same frying pan the cherry tomatoes and cook them, stirring frequently until they get soft and a little bit sauce is formed (but the tomatoes should not melt completely). Add the shrimp, stirring for 1 minute.
- Reduce heat, add arugula and basil, stir quickly. Remove from heat.
- Drain pasta and mix with the sauce. Season with salt and pepper. Serve immediately

Cook frozen tortellini according to package directions along with frozen stir-fry peppers and onions. Drain and stir into heated spaghetti sauce. Top with Parmesan or Romano cheese.

Swedish Meatballs
Heat frozen cooked meatballs and frozen mixed vegetables with a jar of brown gravy in heavy saucepan. Stir in some sour cream and a bit of nutmeg. Serve on refrigerated mashed potatoes, heated according to package instructions.
Steak Supper
Broil your favorite type of steak (I like ribeye). Combine a jar of drained mushrooms, 2 tablespoons butter, and 2 teaspoons soy sauce in small pan; heat until hot. Top steaks with sauce and serve over mashed potatoes made from flakes, or refrigerated mashed potatoes, according to the package.
Cheesy Tortellini
Cook refrigerated tortellini and frozen broccoli in the same pot until pasta is tender and broccoli is heated through. Add refrigerated four cheese alfredo sauce along with some grated Parmesan cheese and heat.
Meatball Sandwiches
Heat frozen cooked meatballs and some frozen peas with a jar of spaghetti sauce. Spoon onto toasted hoagie buns and top with mozzarella cheese slices. Broil about 1 minute to melt cheese.
Olive Pizza
Top a Boboli pizza crust with chopped olives, green onions, salsa, and shredded Cojack or Pepper Jack cheese. Bake as directed on crust package.
Smoked Salmon Pizza
Top a boboli pizza crust with softened cream cheese, then spoon refrigerated pesto on top. Top with soft cold-smoked salmon strips and Havarti cheese. Bake as directed on crust package.
Tuna Alfredo
Cook bow tie pasta with frozen mixed vegetables and drain well. Mix with canned, drained tuna and refrigerated alfredo sauce and heat. Top with grated Romano cheese.
Salsa Wraps
Brown chicken breast pieces in olive oil in skillet, and stir in some salsa. Cook until chicken is thoroughly cooked, then shred chicken in the sauce. Layer on warmed tortillas with lettuce, tomatoes, cheese and sour cream. Fold tortilla and serve.
Shrimp and Couscous
Heat together cooked shrimp, a can of tomato sauce, 1/2 teaspoon dried Italian seasoning, and undrained Italian diced tomatoes. Serve over couscous, cooked according to package directions.
