If they have a smile on their face when they say it,

I just say "thank you" and give a friendly smile back.

They are saying thank you for shopping there, and you are saying thank you for being there, being polite, and acknowledging you!

If they look like they are having a bad day and not smiling, I say "Have a good night!"

i usually nod and smile
or mm-hmm
or a combination of the two

cuz you feel like you have to respond but its not like he is actually thanking you

its his job
so you just awknoledge him and move on

How about, "Thank you for working your butt off at low pay so I can save about $2000/year on consumer goods."
