40gb-no backward compatibility 2 usb ports no card readers
60gb-great backword compatibility card readers 4 usb ports
80gb-backward compatibility but not as good as 60 gb 4 usb ports and card readers
You should get the 60gb because its a pretty good price and is gonna be bundled with 2 games soon.

40GB has two USB ports, no card reader and no PS2 backwards compatibility. Also it has matte finish.
60GB has 4 USBs, card reader and the best backwards compatibility due to Emotion Engine chip (correct for NTSC version, PAL version is the same as 80GB). Sony sells this version till stocks last - later it won't be on sale anymore.
80GB has 4 USBs, card reader, but doesn't have Emotion Engine chip, so it's backwards compatibilty with PS2 games isn't that good, but still exists.

40gb-ONLY in JAPAN at the moment and is white
60gb-has memory card reader and WI-FI
80gb-same as 60 but comes with motorstorm but is not fully backwards compatible
so if you don't have a ton of PS2 games that you dont mind playing i would go for the 80 gb

The only difference is their memory size. If you are going to download a lot of stuff to your ps3, then you should get 80 gb. If you are only going to use your ps3 to play games, the you should get 40 gb. The 60 gb is somewhere in between.
