According to the tradition Moses wrote most of the Torah.
The Documentary Hypothesis is another, more modern theory.

G-d dictated the first 4 books to Moshe. Moshe himself wrote the 5th in a lower level of prophecy, and G-d approved it.

In the name of God, the Gracious, the Merciful
Surely, We sent down the Torah wherein was guidance and light. By it did the Prophets, who were obedient to US, judge for the Jews, as did the godly people and those learned in the Law, because they were required to preserve the Book of God, and because they were guardians over it. Therefore fear not men but fear ME; and barter not My signs for a paltry price. And whoso judges not by that which God has sent down, these it is who are the disbelievers.
And when Moses returned to his people, indignant and grieved, he said, 'Evil is that which you did in my place in my absence. Did you hasten to devise a way for yourselves without waiting for the command of your Lord?' And he put down the tablet and seized his brother by the head, dragging him towards himself. Aaron said, 'Son of my mother, the people indeed deemed me weak, and were about to kill me. Therefore make not the enemies rejoice over my misfortune and place me not with the unjust people.'
Moses said, 'My Lord, forgive me and my brother, and admit us to Thy mercy and Thou art the Most Merciful of those who show mercy.'
And when the anger of Moses subsided, he took the tablets and in their writing there was guidance and mercy for those who fear their Lord.
And, surely, We sent Moses with Our Signs and manifest authority,
