Jesus wrote in his diary every night but it was a bummer cause Matthew and Luke would always barge into his tent and ask for more wine

That would be true if Jesus was thinking of writing a book. The bulk of the New Testament was written around 50 years after Jesus' death, and the Bible that we know today wasn't put together for several centuries afterwards.

Jesus wanted His followers to spread the Good News by word of mouth and gives pretty specific instructions on how to go about doing that if you read the Gospels
Jesus never wrote anything down except for once, when He wrote something in the sand right before He said, "Let he who without sin cast the first stone."

Nope. He did not literally write any of it, though some may argue He inspired it.
Why is that strange? Could you picture this?
"I am the Son of God. After I claimed this, I went and healed a man in this town of blindness, then I walked on water out to my disciples..."
With just His teachings, no one could determine that He is/was the Son of God. And that's all He would have been able to write without sounding a little ridiculous to the outsider.

Jesus' words were recorded by others. Jesus' mission was not to document the word .. He was here for another purpose.
I would stop question the Bible and decide if you believe there is a God. If you do, then you should decide if He cares.

Written by Jesus, no.
But, in actuality, the whole Bible is written by Jesus, as part of the Trinity.
Father, Son and Holy Spirit.

There is a fictional novel called the Gospel of Jesus, it's really interesting. Mailler I think wrote it.

John Chapter 8: "Jesus stooped down, and with His finger wrote on the ground" (v. 6b).
That's all we have.
