Before friday- if I'm telling a group of students goodbye for the weekend at noon, I'm still going to tell them shabbat shalom, as I won't be seeing them ON or AFTER sunset, but I still wish them a good shabbat.

After sunset on Friday and anytime on Saturday until sunset. You can also wish your Jewish co-workers "Shabbat Shalom" before you leave work on Friday.
Also, it's spelled Shabbat, not Shabbath.

From sunset on Friday until sunset on Saturday. Many people also say "good shabbos" (Yiddish).

From just before sunset throughout Saturday should be fine.

It's not even Friday here. Instead of shabbat shalom, I'll say that Jesus loves you.
