I love cheeses of all kinds but cheddars are my favorite. Here in upstate NY we a sharp cheddar called "Adirondack" made by McAdam. It is by far the BEST cheddar cheese I have ever eaten.

2. Mimolette - an aged hard orange French cheese
3. Brie - soft French cheese
4. Feta - Greek cheese made from the milk of sheep or goat

Havarti is excellent anyway you eat it. Plain, on a cracker, or on a sammich - it's the best!
