1 pound mixed ground beef and sausage, browned and drained
1 medium onion, diced
1 green bell pepper diced
2 cups chopped celery
2 (28-ounce) cans diced tomatoes
1 (28-ounce) can whole, peeled tomatoes
Ground cumin
Chili powder
1 (14 1/2-ounce) can pinto beans, drained and rinsed
1 (14 1/2-ounce) can black beans, drained and rinsed
1 (14 1/2-ounce) can kidney beans, drained and rinsed
1 package chili seasoning mix
Shredded cheddar, sour cream, chopped green onions, for garnish

In a skillet brown ground beef and sausage, drain and set aside.
Spray large pot with nonstick cooking spray and heat over medium heat. Add the onion, green pepper, and celery and saute briefly. Stir in the diced and whole tomatoes. Add cumin and chili powder, to taste, and cook for about 8 minutes or until vegetables are tender. Add the beans, browned meat, and chili seasoning. Partially cover, and let simmer for 4 hours.

Serve with Cheddar cheese, sour cream, and green onions.

Mine!
1 lb stew beef
1 lb stew lamb
1 lb stew pork
4 chipotle chiles (from a can)
1 TBSP adobo sauce (the stuff the chipotle chiles come in)
1 16 oz jar salsa
1 TBSP tomato paste
2 hand fulls of crunched up tortilla chips (thickens the chili)
1 can/bottle + 2 TBSP beer (I like Newcastle Brown Ale)
1 shot bourbon (Jack Daniels)
1 tsp cumin
1 tsp cayenne pepper
1 tsp garlic powder (POWDER not salt)

Brown meat in pot, remove from pot and set aside. Add beer to original pot and use heat and liquid to get the stuck meaty goodness off the bottom of the pot. Add the rest of the ingredients, bring just to a boil and put in a slow cooker until the meat is falling apart. I serve it over Fritos with a bit of cheddar cheese, sour cream and chopped onions. I won 2 chili cook offs with this recipe!

It also has a great breakdown on how to get your meat for chili really cheap and better than the ground stuff at the store. The recipe tells how to use dried beans but I use canned if I'm in a big hurry and haven't planned ahead. Super easy version for tonight- ground beef, chopped onion, tomato sauce, canned beans and an enchilada seasoning packet! salt and pepper to taste

my fav.. chili

Vegetable cooking spray
1 pound lean ground beef
1 1/2 cups chopped onion
1 cup chopped green bell pepper
1 teaspoon minced garlic
2 to 3 tablespoons chili powder
1 to 2 teaspoons ground cumin
1 can (15 ounces) Red Kidney beans or 1 1/2 cups cooked dry-packaged Red Kidney beans, rinsed, drained
1 can (15 ounces) Pinto beans or 1 1/2 cups cooked dry-packaged Pinto beans, rinsed, drained
3 cans (14 1/2 ounces each) chili-seasoned diced tomatoes
2 tablespoons brown sugar
1 tablespoon unsweetened cocoa
Spray large saucepan with cooking spray; heat over medium heat until hot. Cook ground beef until browned, 5 to 8 minutes, crumbling with a fork. Add onions, bell pepper, and garlic; cook 5 minutes longer.
Add remaining ingredients; heat to boiling. Reduce heat and simmer, covered, 20 to 30 minutes.
Makes 6 servings (about 1 1/3 cups each).

you can also cook in a slow cooker for 5- 6 hours

OUTLAW CHILLY

1 lg. bell pepper
1 lg. onion
3 lb. ground beef
2 cans tomatoes (16 oz. cans)
1 can tomato sauce (16 oz. can)
1 pkg. mild chilly powder
2 cans chile beans (16 oz. cans)
16 oz. Cheddar cheese, shredded

Chop up bell pepper and onion. Saute until brown. Put in ground beef and cook on medium heat until brown. Drain grease from beef. Add tomatoes, tomato sauce, chile powder and chile beans. Place heat on low or simmer and cook for 1 hour. Put shredded cheese over chilly when serving. Serves 6-8.

CHILLI BILLI

2 lbs. ground beef
1/4 c. salad oil
1 c. chopped onion
1 c. chopped celery
1/2 c. chopped green pepper
1 clove garlic, minced
16 oz. can tomatoes
8 oz. can tomato sauce
6 oz. can tomato paste
2 cans kidney beans (16 oz. each)
1/2 c. water
1 1/2 tbsp. chili powder
1 tbsp. paprika
1 tbsp. sugar
1 tsp. ginger

Brown beef in oil in large skillet, pour off grease. Add tomato products, kidney beans, water and seasonings. Simmer gently for about 1 hour. Makes 8 to 10 servings.

TEXAS CHILI

2 lb very lean ground beef or diced chuck steak
7 T chili powder
1 T ground cumin
2 t paprika
1 onion, finely chopped
2 t salt
1 1/2 t cayenne pepper
2 T masa
1 8oz. can tomato sauce
1 15oz. can red beans (optional)
1 15oz. can tomatoes(whole or diced, drained) optional

Brown ground beef and drain. Stir in tomato sauce and 2 cans of water. Mix all ingredients except cayenne pepper and masa. Simmer 30 min. Add as much pepper as desired. Mix masa and 1/4 c warm water. Add to chili and stir well. Add Tomatoes or beans if desired. Simmer 20 min.
Of course, feel free to add more or less pepper. I usually serve it over rice or with tortilla chips, sometimes both. Enjoy ;)

1 can of Hormel Chili
Put in a bowl and microwave on high for 3 mins. & presto!
