Could allergies and food-intolerances be signs of an organism adapting to it's environment?

As for your theory on children and their exposure to foods to build up their tolerances ... it ain' working with my 5-year old and egg-white. She looks like she's fallen into a bed of nettles if you feed her a meringue!

No, the only way you can find out if you have a allergy or food intolerance is with a blood test. Many people think they have this problem and decide off the cuff not to eat X, but fail to realize they are doing themselves more harm than good because X might contain a essential vitamin or mineral and they are not eating another food to insure they get the correct vitamins, minerals. Likewise you can try the diary and elimination, note down what you ate, what you did and how you feel before going to bed. If you THINK the fresh OJ at breakfast is causing your skin to itch, then stop the fresh OJ for three weeks see how you get on. The reintroduce it and see what happens. However remember laundry products, power, conditioner can also cause your skin to itch, so while attending to this diary make sure you do not change brands of laundry products, because it could be that and not the OJ.
Outside of the Cealiac and a few known food areas, none of us really have any intolerance, providing that as children we were introduced to a wide variety of foods. Glad to report that once I had one tooth in my head I ate what my Parents ate, albeit mashed up, but no baby food for me. Therefore I can eat pretty much anything.

No. Apart from genuine medical problems which are few,It's just fashionable to have an allergy or to be intolerant of something.
Eat more dirt!
