I will swap out the hard drive for a bigger one either way, so which platform is better overall disregarding the hd size? I don't have a PS2 and I want to be able to play that game library as well as have the PS3's functionality.

I would recommend you to get the 60GB because it has the backward compatibility. The 60GB model can play more games from the PS2 library while the 80GB may have some problems with some of them. With the 80GB model, they don't have the emotion engine. The 60GB does! Since you said, that you will upgrade your hard drive, I actually would recommend the 60GB hard drive.
If you are really already into buying it, I would recommend craigslist.org and find your state and city at the right hand side of the web, then search for PS3 or PlayStation 3. Make sure you get prices from $300-450. The prices have been raised up since I bought mine ($375). Now they cost about 400-450 on craigslist.
