I love my canon (and I am not the only one,) I use the digital ixus. Just bought a new one, to upgrade.
But all of them are extremely user friendly, literally point and shoot, but if your mom finds she want to explore a little more the camera can handle it.
On (this page of) this site you can compare cameras by what you want out of them, just select or leave them on default.

All super compact cameras are good now, not all are super easy to use, but the well known brands are all reasonable.

Not everyone on Earth needs a digital camera.
Get her a nice p&s film camera like an Olympus Stylus.

Any point and shoot camera you buy these days has an automatic setting. Just point, and shoot. That's as basic as it gets. Go to cnet.com for a buyer's guide on cameras.

Get a Cannon Powershot. no longer basically does it furnish super, sparkling photographs, even though it extremely is quite elementary to apply and has many cool valuable properties. i offered mine no longer too some time past and it works super.

Love my Canon Powershot SD600 (they now have several better models). Very easy to use and great pics. Also tiny enough to thow in her purse and leave it there for whenever she wants to use it....the original reason I bought it. Can also use it to take small video clips - but still VERY easy to use.
