make a roasted corn salad.
roast some corn on the cob and cut it off with a knife. Dice up some jarred roasted red peppers and cucumbers. Make sure everything is the same size as the corn kernels. Chop some cilantro, add some crumbled blue cheese and make a simple emulsion dressing with olive oil, red wine vinegar, salt & pepper and about a tablespoon of dijon mustard.

my son loves potatoes and i hate serving fatty fries so i started making "chunky potatoes" to satisfy us both.
peel and cut taters into medium sized chunks, about 1 -2 inches keeping the size consistent, melt one tablespoon butter in a large skillet with a tight fitting lid. spread the potatoes in the skillet so that each chunk is touching the bottom with a little butter. sprinkle with italian seasoning (or your favorite combo of herbs) and your favorite salty seasoning (i use goya adobo). cover the skillet and heat over a low flame. when the taters are browning on one side, flip each one and season again on the other side. each side takes about 15 minutes. the low flame makes the taters soft and requires very little fat.
i like to make a huge batch then serve leftovers like a baked potato with bacon bits and sour cream.

Are you serving the fried chicken hot or cold?
If serving hot, go for the traditional mash potatoes (I make mine using ranch dressing for a little kick)
If serving cold, how about a potato or pasta salad

Mashed potatos with brown gravy, or rice pilaf with green beans. You could also use a bunch of sauces like honey mustard or bar-b-que.
