No bank will honor a check more than 6 months old. If you wrote the check in late April, the check can still be cashed. If the company is asking for a replacement check, and they want it now, then I would first check with your bank to make sure that they would not honor the check. If that would be the case, then I wouldn't bother with the stop payment. I would also tell the company that you will send them a check after the 1st of November. But don't send them a postdated check, as they may take it to their bank, and the teller wouldn't notice the date of the check and deposit it. You would then have an argument with your bank. The problem would be with the accepting bank.

If it was deposited back in April 2007 it would have already cleared the bank. It is too late. Is it your check and has it cleared your bank ?? If it has not, it depends on who you wrote it to and if you want it to clear. Did you write a replacement check, it so.. you may want to put a stop on it.

I'm going to say yes, but I don't know how, the only reason
I say yes is because I had a Debt Consolidation Company
and when I told them I got laid off from work and did not
know exactly when I would send in a payment, they cancelled
my contract and somehow revoked six months worth of bills
that CLEARED the bank.

If the cheque has not yet been deposited, then yes, you can put a stop payment on it. You'll need your cheque #.
