Not a problem - dogs are very strong and are natural climbers - if she wants to dash up and down the stairs there should be no physical damage done to the dog - your stairs will eventually suffer though. Imagine what your stairway will look like in 6-12months once she is 120-150lbs! Hip disorders are hereditary in dogs and can develop as they mature but not likely from physical exertion - ask your vet for prof advice.

Although the larger dogs can be prone to hip problems, these are typically genetic, and not caused by any specific action. Assuming she has come from good breeding, she should not have any hip problems.
If she is from bad breeding, then hip problems can possibly exist, and stairs or anything else will not have any affect.

Better quality food & dane puppies are lanky & thin. Danes typically do not start putting weight & filling out with muscle mass until after 18mo of age. Their bodies are focusing on growing rather than filling out as with any puppy. Due to the large size it simply take them longer & should not be rushed. It only leads to damaging their joints/bones. He won't be fully grown til after 2yr & up to 3yr.

Yes of course. Walking up or down stairs doesn't cause hip dysplesia its typically hereditary and you cant stop its development.

She should be fine unless she's already injured somehow. But if you're concerned, go ahead and get a pair of baby gates for the top and bottom of the stairs.

My older dog has hip displace. and she is better if she keeps moving. She is in more pain if she lays around and does nothing. So it is probably better for her to be moving. But if you feel that she could hurt herself, block it off. Your the mom!
