It is called brandy snap because it is meant to have with brandy....... the brandy in the snifter / glass and the snap is ~ as your surely know ~ is like a little ginger snap that is shaped into a cone as soon as it comes out of the oven and is cool enough to handle; stored airtight until ready to serve... they are then filled with whipped cream, put on an individual serving plate to accompany a snifter of brandy

The general idea is to have brandy but some people don't care for alcohol, so they leave the brandy out and maybe add brandy flavoring.

Because the traditional filling is whipped cream with added brandy.
Not a lot 1tsp to 100ml

oh, it did have... just like coke contained Coka, or cocaine...

times change... they dont even put alcohol in gripe water any more...
