I dont have all the time in the world either... i kind of want an easy sauce to make that wouldnt take a LONG LONG time.

creamy alfredo sauce
take 1/2&1/2 [idon't know how much you need for your meal u r making] chop or keep shrimp whole your preference .fry them lightly in butter.add to 1/2&1/2.add some garlic alittle old bay any other seasonings to your taste.heat just til hot enough then add parmesan cheese[or your fav cheese] if u want it a little thicker mix a little flour and water.add to cream. oh i also like to add some minced onions when cooking shrimp.for a little more zest add a Tbs. of loose chicken bullion.add shrimp and butter to sauce then put on top of cooked flounder or also try pasta happy eating make allthe time kids love it!

This may sound odd, but I did it at a place I used to work. Just get a can of cream of shrimp soup. Prepare as normal and toss in the shrimp. A little garlic helps too. And if you have the time, saute some minced red onion, and garnish with chopped green onions.

Lemon Dill Sauce for Fish

2 teaspoons plain yogurt
1 teaspoon cornstarch
1/4 teaspoon dillweed
1/8 teaspoon pepper
2 tablespoons lemon juice

In a large bowl, blend together yogurt with cornstarch, dillweed, and pepper until smooth.
To cook with fish: Brush lemon juice over the fish and broil until almost cooked. Turn the fish and brush evenly with the yogurt/dill sauce. Continue broiling until fish flakes easily.
Makes scant 1/4 cup.

Make rolls. Top each fillet with a mixture of cooked shrimp and stuffing. Crab meat is also great if you have it. Roll each fillet and secure with toothpicks. Bake in the oven for about 30 minutes on 400 and top with a hollandaise sauce! YUMMY!
