Because Paul is so far above most people in theological and spiritual understanding, that they knock what they cannot understand. Personally, I love Paul's writings. They are deep spiritual truths. People without the Holy Spirit just can't fathom them. Plus, what Paul wrote is through divine inspiration. Moreover, people feel deep conviction of their sin when they hear or read what Paul said.

Isa 29:14 - Therefore once more I will astound these people with wonder upon wonder; the wisdom of the wise will perish, the intelligence of the intelligent will vanish."
Jer 8:9 - The wise will be put to shame; they will be dismayed and trapped. Since they have rejected the word of the Lord, what kind of wisdom do they have?
1Co 1:19 - For it is written: "I will destroy the wisdom of the wise; the intelligence of the intelligent I will frustrate."
1Co 1:20 - Where is the wise man? Where is the scholar? Where is the philosopher of this age? Has not God made foolish the wisdom of the world?
So many "scholarly folks" out there just want to dis-credit the Word of God based on "informational knowledge" and supposed "facts"..always removing the FACT that God is God & He can do whatever He pleases.
Which is why the above listed Scripture WILL be shown as FACT someday soon.
Someday, as the world gets more & more steeped in sin...people will have to decide, do they want to live for the Lord REGARDLESS of what they "see".
I myself have come to the conclusion that I would rather live my life as if there is a God, and then die & find out there isn't; than live as if there is no god, die & find out there IS!
For our God is a consuming Fire, and it IS a fearful thing to fall into the Hands of an Angry God!

I think the answer to your question lies in different views & interpretation techniques applied to the Bible. When I read your question, I instantly thought, this has something to do with the influence of "higher critics".
My husband also tells me that many of the heretical "Jesus only" churches are probably of this mind of "too much Paul, not enough Jesus." I'm not for certain, but I would bet that they see Jesus as an earthly king, not a heavenly one. They simply don't like Paul's "theology of the Cross", but would rather accept a "theology of glory" which is not at all Christian.
These churches were as I understand it born out of the charismatic movement. I've attached a link to a document about the errors of this movement below. It may give you some clues as to how this thinking came about.
Both sets of thinking have probably been allowed to creep into the church in one form or another. The bottom line is that people want to pick & choose what they want to believe & practice out of the Bible. One of the so-called teachers at our last church (who had all but abandoned Scripture as the first & final authority) didn't like Paul because he wasn't a radical feminist like he thought he ought to be.

Don I have read your Q many times, so I feel I know a little about you and your understanding of the Bible. So,
I will try not quoit scripture for you know it, I will wright frankly, what we are seeing is the influence of the evil one. The father of lies.
He is still bound but his followers are many, Remember Jesus said Father forgive them for they know what they do.
They truly do not, they cannot see, hear or even control themselves, May God help them!
The Apostle Paul is waiting just like all of us.
The sentence handed down is sure, but has not been carried out as yet. Hold tight, never faint, God is with you!
Continue as you do, we are now seeing surges, if you will, of hatefulness, it will only get worse.
Than the terrible Day of the Lord will come.
All will be brought into the light, and we will see The Glory of our Lord and His Love, as He is, now we can only see in part.

Good question! far too many are falling into the snare of the enemy.
Here is a verse to hopefully stop the heresy. If Peter who was a pupil of the very Son of God received Paul and accepted him, we should do likewise.
2Pe 3:14 Therefore, beloved, since you are waiting for these, be diligent to be found by him without spot or blemish, and at peace.
2Pe 3:15 And count the patience of our Lord as salvation, just as our beloved brother Paul also wrote to you according to the wisdom given him,
2Pe 3:16 as he does in all his letters when he speaks in them of these matters. There are some things in them that are hard to understand, which the ignorant and unstable twist to their own destruction, as they do the other Scriptures.
2Pe 3:17 You therefore, beloved, knowing this beforehand, take care that you are not carried away with the error of lawless people and lose your own stability.
2Pe 3:18 But grow in the grace and knowledge of our Lord and Savior Jesus Christ. To him be the glory both now and to the day of eternity. Amen.

Muslims hate Paul with great loathing because his theology shows why Christians worship Christ as God. (They also have to refuse to accept John's gospel, for the same reason.)Jews likewise detest Paul's theology, especially as it shows how the Mosaic Law was fulfilled in Christ, and superceded by the New Covenant.
The reasons for uproar against Paul in his lifetime were various. First, he was a 'turncoat' - he forsook Phariseeism to become a Christian. For a while this also made many Christians extremely nervous about him (he'd murdered many of them as a Pharisee). When he became an established Apostle, some in the new Church began to stir up trouble for him because they were hoping to draw followers away to themselves. Others were determined Gentile converts should be circumcised and keep the Mosaic Law. Paul clearly saw that if those Judaisers succeeded, the Christian Church would be destroyed and put back into the bondage of law-keeping. So he stood up to them and showed how Christ did away with the old Law covenant and set Christians free from legalism.
Today legalism is as dangerous a foe to Christianity as ever it was, with some Christians ensnared by it. Other religions like Judaism and Islam are still bound by it and fail to understand why Christianity is so different. Any faith system that depends on legalism is at severe odds with Paul's theology, and hence, Christianity. I am not aware of any of Paul's statements contradicting the word of God.

There Is none ! God give Paul the words to write. Plain & simple.
The reason some people don't accept these writings Is because If they do accept them....
It makes them accountable for the knowledge they have read and accepted.

There are probably two principle reasons. Paul makes crystal clear justification by faith in the finished work of Christ. Justification by faith sounds simple- simply believe! But saving faith demands that one's whole life be committed to Christ. Many are afraid of that, and would rather that people are saved by works, usually religious works, like fasting, going to 'church', praying, lighting candles, visiting shrines, etc.
The other reason is increasingly likely, these days. It has come to the notice of homosexuals that Paul made their practice off limits. Christ did not mention homosexuality explicitly*, and homosexuals like to imagine that Christ permitted the practice. But, almost certainly, the subject was not an issue in Palestine, and Christ had no reason to mention it directly. Paul, though, had to meet head on Hellenist and Roman influence in Corinth and other notorious cities. But nevertheless, homosexuals are very likely these days to say that Paul invented a separate religion, not the one that Christ began.
*Though he confirmed that the people of Sodom and Gomorrah were sinful, which many people do not notice.

because Paul talked alot about the SPIRIT. and the
armor of GOD. how to use faith and How Not to be
deceived. how to tell a true beleiver from the false
teachers. satan hates the word and tells the lies
he told eve. surely the word didn't say beware of false
prophets. paul wasn't a disicple. same garbage, different
year. by knowing the scripture we are delivered by
our knowledge of the word!

Because they also do not believe in Christ or God. To accept Paul, you must accept Jesus and continue and accept God. Without Jesus, there would be no Paul. Without God, there would be no Jesus.
So, if you do not accept that there is God, you don't accwept Christ and do not accept the writings of Paul.
