I don't know if this is your cup of tea but just wait until you get out there. Book a place the first night and stay there then hire a car or get a moterbike and spend the next day driving around the island to see what you really like. It's quiet a nice way to see a bit of the island and I'm sure you won't have a problem getting a room. I think with 2000 baht you should be able to get a nice room.
Why not think about staying in an apartment or room. Me and my boyfriend stayed in this really nice wooden chalet type thing last year for 900 baht a night. It had a really nice porch and was a 2 minute walk from the beach situated amongst all trees and plants, kindda like being in the jungle. It still had a cleaning service, air con, fridge in the room and there are always loads of resturants and bars around.
When are you going and for how long? I'm going out to Samui at the beginning of December and planning on staying for 8 months.
Good luck with whatever you get up to and I'm sure you'll enjoy yourself.

There are lots of good hotels on all sides of the island that will fit your budget requirements. It depends whether you want to be in the thick of the party or in a nice secluded area. Beach or inland? here are a couple of sites for ideas.

i stayed at the same resort last year and it was great, a bit more money than expected but well woth the extra. there are numerous guest houses on chaweng road all cheap some not so cheerful.
for a really cheap room go above burger king, we got a double for 200 bhat, it was clean, air conditioned and had a tv.
Koh pang nang (spelling)(a short ferry ride from Samui) has the best and cheapest beach huts, very cheap but basic, they are right on the beach though which is handy for the full/half moon parties.
