It depends on what you would like to do with the roast.
Generally I season mine before hand with whatever I would like to do with the roast. For example if I wanted to make pulled pork sandwiches with it I would season with salt, pepper, garlic, brown sugar, cayenne and cumin. Let this sit overnight and add with about 1 c. of water to a crock pot for about 6 hours. Then break up with a fork into shards and add some bbq sauce and let cook another hour or so.
For a more traditional type of roast I would stud the roast with fresh cloves of garlic, and season the outside with salt and pepper. Sear the outside in a frying pan and then roast in the oven on a bed of onions until the meat is undercooked by about 15 minutes according to your directions. Let this sit on the counter for 15 minutes and it should be medium well. You don't want to cook pork to it's full time or it gets really dry. People are under the misconception that you will get ill from pork that is not cooked until it is greay. Not true. For the last 30 minutes you can add some potatoes and carrots for a side dish to the pan if you like. The best thing about this recipe are the leftovers. Once your family has eaten the roast you can make cubano sandwiches from it.
I saw someone mentioned butterflying the meat. This can be difficult if your knife skills aren't that great. I still can't butterfly a whole roast well, and I have been cooking for most of my life. It takes a lot of practice, so make sure that you aren't serving it to guests. It will probably taste good, but not look very good.

You could "filet" it out. Use a sharp knife & cut into the roast so you end up having it look like a rectangular piece of meat when done. Sort of like a jelly roll backwards. When the meat is all flat in front of you season with garlic, grated parmesan cheese, & place fresh spinach leaves all over the surface. Now roll it back up like a jelly roll & secure with toothpicks. Roast in oven 325 - 350 for about 35 min per pound. This smells so divine while cooking. Bon Apetit!

Cook low and slow and you will have a fork tender but juicy roast. I rub a pork loin with garlic salt, flour and soy sauce and cook at 325 for at least an hour per pound. Everyone raves about it when they try it.

for a pork roast i would cook it in the oven at 350 and i would coat it with apricot jam cut up some carrots and let it cook for about 21\2 hours then check with meat thermometer

Nooooo, let me tell how to do it mi amigo......... Get 1/3 cup of vineager, 1/3 cup of oil 8 cloves of garlic ground up 1 teaspoon of emerils original spice 1 teaspoon of mccormicks mesquite seasoning and one tablespoon of to 1/4 cup of lemon oe lime juice. you may want to up the following ingredients to your taste. But mesquite and garlic are a must. put in bowl and marinate over night. themn cook in crockpot for 6 hours on slow cook. will fall apart in your fork. serve with salad, corn, peas or whatever you want brother........it's all good. but very good iwth mashed red potatoes with a little milk , garlic salt and mayo...1 big tablespoon, and they will be niceand creamy.........good luck

sear it in a pan, fill the pan with some of your fav veggies and a little water (half cup or so) slide the pan in the oven at 375 2 hours .enjoy

put it in a roasting tin with a bit of garlic, put it in a pre heated oven on medium heat for about 2hrs.
