On the "manual" setting on my camera I noticed that the camera limits the setting sometimes of my apeture. Can this be overridden?

I own a XTi and would suggest that you read your manual over and over (I did and still do from time to time). If your XT has a shutter speed from 30sec. to 1/2000 of a sec. that is it, if your aperture on your lens has a range from f/4. to f/22 that is all you can work with in a "FULL MANUAL MODE". Have you tried changing your ISO.

I don't think the camera is limiting the settings, it may be that the lens you use doesn't have a large aperture. If the lens is a 3.5 you cannot make it go to a 2.0, it just doesn't have that capability. Also, if you are zoomed in on something, the aperture will be larger also. The lens will give you the range of aperture that you can use, something like f/3.5-5.0. This means as you zoom the aperture will get smaller and you won't be able to use the 3.5 when you are zoomed in on something. If this is the case, you might want to invest in a faster lens. Something like a 1.4 or a 1.8. This will give you lots of variety in shooting.

In full Manual Mode you should be able to set aperture and shutter any way you want - unless the camera has a pre-set over or under exposure prevention setting. Review the section on shooting in Manual Mode in your Owner's Manual. There is probably a simple way of disabling such a setting but its up to you to find it.
