Madras Curry Recipe
Ingredients :
1 kg Skirt or chuck steak
1/4 cup Ground coriander
6 teaspoons Ground cumin
1 teaspoon Brown mustard seeds
1/2 teaspoon Cracked black peppercorns
1 teaspoon Chili powder
1 teaspoon Ground turmeric
1 teaspoon salt
2 teaspoons Crushed garlic
2 teaspoons Grated fresh ginger
2-3 teaspoons White vinegar
1 tablespoon Oil or ghee
1 medium Chopped onion
1/4 cup Tomato paste
1 cup Beef stock
Method :
Trim the excess fat and sinew from the meat, and cut it into 2.5 cm cubes.
Place the coriander, cumin, mustard seeds, peppercorn, chili powder, turmeric, salt, garlic and ginger in a small bowl. stir to combine. Add the vinegar and mix to a smooth paste.
Heat the oil in a large pan, add the onion and cook over medium heat until just soft.
Add the spice paste and stir for 1 minute.
Add the meat and cook. Stirring until it is coated with the spice paste.
Add tomato paste and stock.
Simmer, cover, for 1 hour 30 minutes, or until the meat is tender.

For me the key is to make the curry paste first using fresh ingredients.
2 Green Chili
1/2 Naga Chili (or Scotch Bonnet)
1 Handful Coriander Stalks
1 Thumb Ginger
3 Cloves Garlic
1 Thumb Turmeric
1 Lime Juice and Rind
1 Teaspoon Mustard seed
1 Teaspoon Cumin Seed
Grind all of of the above together then add in some cooking oil. In a hot pad add the paste and cook until the oil splits out. Then follow your standard recipe directions of adding sliced onions, meat (chicken), tomato, etc....
Try this out and let me know what you think, I promise it will be nothing like any other curry that you have had.

2 teaspoons peanut oil
1 cup turnips, diced
1 cup carrots, cut into 1/4 inch roundels
1 cup yellow onions, diced
1/2 cup chicken breasts (optional) or chicken thighs, diced (optional)
2-4 tablespoons freshly ground Madras curry powder
2 cups chicken stock or vegetable stock
1 cup potatoes, diced 1/4 inch
1 tablespoon jalapenos, seeded, vained, minced
Heat a heavy stock pot, add Oil.
Add Turnips, carrots, Onions, and Chicken (if used).
Saute 'til slightly carmelized.
Add Curry Powder, continue to saute (stir fry)'til the curry coats all of the vegetables and chicken.
Add water to barely cover ingredients, simmer very slowly for 2 hours.
Add water to keep the mixture covered.
Add Stock, Potato, and Chilies.
Cook and reduce for another hour or so 'til the potatoes break apart and thicken the dish.
Serve over Basmati Rice cooked with a few Green Cardamom Pods or a Cinnamon stick or a few strands of Safron.
A nice Sangria goes very, very well with this dish.
***NOTE*** Always cook currys slowly for a long time to allow the full flavor to develop.
Curry powder from different parts of the world vary tremendously so experiment with all of them, you won't regret it.
Omit the Chicken and Chicken Broth for Vegetarian.

Madras in south India is known for its Delicacy of SAMBAR..There is no such Item as Madras curry and that is the reason you dont get that in any sites. You must have tried the reguler Curries of South.

Try going to an asian supermarket they stock a lot of premix seasoning and curry mixes that are very good (also include recipes), you could also buy some additional spices to add to create your own taste.

The best answer i can give you is that for you to buy the pre-mixed ones and check on the ingredients. from there it is all about experiments with the ingredients. get a basic dry curry ingredient from a website from there you experiment till you get the right taste. good luck.

Cubed beef - ( you must seal it).
onions.
Mushrooms.
Tin toms.
1/2 tin water.
Splodje pure`e.
Curry powder -1/2 tub.
1/4 real butter
Tspn English mustard and 3-4v bay leaves.
Bring to the boil - stirring then simmer for 2 1/2 to 3 hours.
If you are using fresh spices you will need:
Garam masala.
Cumin.
Turmeric.
Chillies.
Cayenne pepper.

i cook madras curry with madrasi curry powder.it is available at any south asian or indian grocery store.
buy it and follow the instructions.
