Each couple is asked to provide a snack for one of our classes. We have a few vegetarians and I was wondering if anyone had a suggestion. One that would be good for a 2.5 hour class of pregnant women, their partners and a couple of vegetarians.

Vegetable platter
Pita triangles & hummus
Bean salad
Celery sticks & peanut butter

LOL.Wow. The way you worded your question makes it sound like the vegetarians are not included in the "pregnant women" category or "their partners"...like they're just extras or something. haha.

Any-who, I would suggest fresh cut veggies (like baby carrots, cerlery, bell peppers, etc.) (but not broccoli or cauliflower!) with hummus.

You could also take a fruit tray (strawberries, kiwi, pineapple, honeydew and various melons).

If the vegetarians are not vegans, a cheese and cracker tray might work well.

Chips and salsa is a good bet - but to keep it from being too messy, mix the salsa with some cream cheese - that way you have a stiff, hearty dip. (again, this will work if they are NOT vegans).

Warm spinach dip with some crusty bread could also be a good option.
