I think starting off with a nice big salad always works--load it up with veggies and offer several dressings.
You can make vegetable casseroles--the possibilities are endless. You can even "veganize" meat casseroles by using tofu, tempeh, or seitan instead of meat.
You can make chili by crumbling tempeh into the pot instead of meat. Serve with fries and/or cornbread.
You can make pasta and marinara sauce. Use crumbled tempeh or veggie crumbles to give the sauce a hearty texture. Use nutritional yeast instead of cheese to avoid the possible rennet issue.
For dessert, the possibilities are endless, of course.

You have endless possibilites! Try just searching for recpies on-line. My husband is a die hard meat eater but there are tons of veg things he eats because they are good.
I think it is very nice that you do that for your friends.

Added: You do not have to use a meat substitute. Don't listen to that crazy talk. There are tons of meals that have no need for meat at all. I'm sure most meat eaters have at least 4-5 meals a week that do not contain meat. Make a pasta or veggie lasagna, personal pizzas, there are tons of options.

Stuffed shells

Pasta/Veggie dishes
Appetizers can be stuffed mushrooms or bruschetta.

If you want to try some tex-mex cooking, it would be quite easy to make dishes that are delicious for everyone to enjoy. Try the following:
Spanish rice
Cheese quesadillas
Veggie burritos
Veggie flautas
Sauteed vegetable fajitas
Tortilla soup
(Side of) Grilled corn
Black bean tacos (soft or hard)
Tostados (easy to do either cheese or veggie variety)

Curry and Spaghetti are pretty easy to make vegetarian.
Eggplant burgers are pretty good too.
Vegetable soup could be a good idea for a starter.
Theres a lot of mexican style stuff that can be vegetarian too.
also, not all vegetarians and vegans will eat meat substitutes, many count them as junk food. not sure about your friends though : )

If u like chinese food then maybe u can try the chinese vegetarian...3 course dinner can consists of stir fried vege, sweet n sour fish(used the subsitute which is made of beancurd) and curry mutton(used the subsitute which made from mushroom stem) and serve with steam rice. Healthy n tasty way...

For one thing, I will still have one meat dish, roasted chicken legs or meatballs, crumbed steak strips, etc. for those who eat meat. You can't expect all your meat-eating guests to forgo meat for just 2 people. And believe me, many meat eaters [myself included] really don't like meat substitutes, doesn't taste like meat at all.
The rest of the dishes you make vegetarian. Vegetable spring rolls maybe for a starter with a sweet chilli dip, a potato bake with onion and grated cheese and a roasted vegetable mix [such as broccoli, carrot, green beans, variety of baby marrows, whole baby onions, etc]. I would recommend that you make a protein substitute for the vegetarians, maybe the same that you are making for the meat-eaters just with the substitute?
Dessert, well, there's usually no meat in a dessert, and if they aren't vegan, you can serve pretty much anything.
If you truly want to make everyone vegetarian for the evening, a lasagne or pasta bake with or without meat substitute or a vegetable curry and rice will work out very well.

Make a Florentine lasagna with no meat. Use chopped walnuts instead. I had it at my veg. cousin's house and it was fabulous.
Serve it with a good sized green salad and offer a variety of salad dressings.
Serve warmed rolls or bread with butter or oleo.
For dessert, serve a light ginger cake with apples cooked in simple sugar, garnished with whipped cream.
Offer a good Merlot for those who drink, and iced herbal tea for those who do not.

Start with olive oil sauteed mushrooms or stuffed cherry tomatos for appatiezers, a light salad with italian dressing, stuffed tortollini with marinara sauce, and rum cake for dessert
Or try miso soup with a light salad, vegetable yakisoba (use fresh noodles), and sherbert for dessert.

Go to the store and get any protein substitute food. They have actual Tofurkey with Stuffing packages. They make SOOO many alternative foods. Go to a grocery store and check out the options. You'll get a lot of ideas.
