What a boring diet! Any diet should have variety or it is bound to fail. And you need to combine some exercise as well.

Okay, I have heard that some people will mash up chickpeas with some seasonings as a tuna substitute.

Instead of chicken, you can have tofu, but it would not taste very good boiled. Try to season it with spices and some lemon juice and grill it.

And talk to your instructor and let her know you're vegetarian. S/he might have some substitutions that work.

"I must have a can of tuna and a green salad..." No. Not good enough. You need a much more varied diet than that. Besides, the tuna has a lot of mercury in it.

Two really good basic recipes with all the proteins you need are succotash (a stew of beans, corn, and squash plus other ingredients) and 'red beans and rice,' a traditional Louisiana recipe.

No doubt there are endless variations on these, like curried rice and lentils, or Chinese stir fry recipes, that you can experiment with until you find one to suit your own tastes.

If you can get (or make) it, some tofu can be substituted for the chicken. Flavouring it with the same 'chicken spice mix' popular in your area will help to make it taste like chicken, if that's what you want

There are many websites which offer vegan and vegetarian recipes, and at least one which has a cd ful of recipes for sale. Google for 'vegan, vegetarian recipes,' 'vegan recipes on cd.'

You could follow the French prescription about eating, "Eat breakfast like a King, lunch like a prince, supper like a pauper," which means ho have your main meal at the beginning of the day (perhaps after taking a 1/2 hour walk--if it's a safe area to do so) and taper off as the day progresses. Take another 1/2 walk after supper dishes are put away.

Substitute fruit and blends of fruit or veggie juices for bags of processed snack foods and pop if you do happen to enjoy those. Try a blend of cranberry juice concentrate and grape or apple juice to see if you like that. [that's if they're available in your area...]

There is several makes such as Quorn that have food that look and taste just like meat, but without the animal dieing and it is extremely healthy.
Without the bones and veins, you can choke on!
Becoming a vegetarian means that you will have less diseases generated by animal flesh.
But I persist you to make one exception to it and eat fish.
Fish is not meat (and fish don't live it to much anyway, they just swim around, etc, etc. Whereas land animals do have a living purpose and do not move around for the sake of it).
Fishandvegetarian diets are the best, I have it myself, for four reasons:
1. Oily fish, and normal fish is good for your brain.
2. I don't like cloggy meat.
3. Vegetables are good for you.
4. No animal had to suffer.
The best thing about becoming vegetarian, is that you can eat a veggie burger (I don't like that one's with actual veg in it, I like that ones that are just like meat but aren't) or other veggie meat, like veggie sausage or lambless.
And you don't need to eat actual vegetables that taste like plain vegetables (if you get my drift).

Please keep this material for future references.

I would suggest more vegetables like carrot and beetroot, grating them makes them a bit easier to manage and it will fill out your salad a bit more.

You could also have nuts and seeds to replace the meat component or you could have some kind of legume thing, like beans or peas or something.

Most meat substitutes arent very nutritious, i would stear clear of them if your trying to lose weight.

Good Luck : )

Boca products are very good and healthy. I think most of the patties are 100 cal, 3 grams fat, but really high in protein. Also try using tofu.

You can opt for Boca burgers or something like that. Look at the calories.

You can also use tofu.
