I am a former chef and here in Canada on the East Coast in Nova Scotia and Newfoundland they like the eastern states in the US have what is known as Navel beef, it is either brisket, flank or a round done as said like corned beef, but it is saltier and the spices are different, it is boiled or boiled and then roasted.

It is used for a Brunswick stew or Boiled dinner, with potatos, tunips, carrots, celery and various other root veg, then serve slices like a stew, here in Canada they may make a flour based dumpling or in Newfoundland they make a side called "Figgy Duff" a steamed fruit and raisin pudding or they have a bag made of cotton and boil split yellow peas and make a "Pease Porridge" and serve it along side of the platter of meat and veggies.

You have a good chance. It all depends on the competition though, you could be going against kids with better resumes than yours or lower resumes than yours. Attend the summer seminar at the Naval Academy this summer. If you make it into that and get noticed, then you'll have a way better chance. :)
