Additionally, I am trying to find great Indian vegan desserts. Any tips would be helpful.

My friend's children are lactose intolerant, she substituted soy milk for many Indian desserts. She esp liked Soy Silk Vanilla, used it for gulab jamuns, ladoos, burfi, gajjar halwa..

I have personally had her dairy free desserts & they were fantastic!

grated carrot roasted and soaked in sugar syrup makes Indian dessert "gajar ka halwa" - its a variation that can be done without adding milk in it.
Try kesari - with rava( cream of wheat) roasted little and add sugar , pinch of salt , water and ghee to it with saffron pieces and add your favourite dry fruits to it in the end.

This isn't much of a homemade dessert, but I LOVE Italian ice! (It is dairy free by the way). Low in fat too!
