Yes, there are vegan butters out there, but they're often expensive. A cheaper alternative is Blue Bonnet Light (I can get it at Walmart for 56 cents!). It says "U dairy" on it, but there is no dairy in it (is is just made in the same factory as dairy products....other Blue Bonnet products). I googled all the ingredients and even wrote to the company. It has Vitamin A Palmitate, which is sometimes vegan, sometimes not. In the margarine, it is plant devived. They say it's not good for baking, but I use it anyway and it works well (though not as well as butter or even non-light margarine). But it's also perfect for bagels, muffins, rolls, pasta etc. Hope this helps.

Earth Balance is pretty good. It's vegan and is not hydrogenated. The taste is pretty decent; I grew up on real butter and always thought margarine was disgusting. But I've even spread Earth Balance on toast and it's pretty good.

whatever vegan like-dairy products you buy,
besides the obvious dairy ingredients, make sure they don't contain CASEIN or RENNET

RENNET is an enzyme harvested from the stomachs of dead cows. then it's combined with the CASEIN to create coagulants in some "vegetarian" like-dairy products

I use Earth Balance with potatoes and Willow Run sticks for baking. Whole Foods and/or your local natural foods store should carry one or both.

Have you ever tried Olive oil instead of butter? It really is good and is better for you:-)
There are a lot of flavored ones also, try dipping your bread in some...Nummy :-)
