This is fun.
Sautee bunches of fun foods - mushrooms, onion, green pepper, crumbled bacon, etc. Anything you can think of.
Mix eggs (3 per person) with a bit of ice water - really whip them up.
Get a couple of frying pans ready.
Allow each person to say what ingredients they want in their eggs, toss it in the pan with the eggs and cook it up.
It just takes a minute to do individual portions and each person gets what they want.
Serve it with a couple different types of juice, muffins (you baked the day before), hash browns,etc.
Makes everyone feel special and you don't have to worry about what anyone likes - they choose their own.
Oh, you can even do the toppings the day before - they'll heat up when you add them to the eggs.

Our family brunches consist of the following menu
chopped egg
tuna
Rolls and bagels
Veggie platter( cucumber, tomato wedges and sliced
lettuce wedges) a salad dressing on the side
Smoked salmon served with cream cheese
*Sometimes I will serve a fruit platter with berries and fruit that is in season with cottage cheese on the side or sour cream
* sometimes I will make veggie crepes with a mushroom gravy on the side( a make ahead preparation)
I choose from the above to make enough choices but not all of the items, as it might be too much choice and too much left over.
As a beverage I serve tea & coffee and a Pitcher if orange juice.
Most of the time I make my brunches a buffet choice, this is easier as the number of people are at least eight, then we all gather at a lon dining table to chit chat. It's great.

I have a really quick and easy recipe for Hollandaise Sauce it makes a wonderful brunch item called Eggs Benedict.
The sauce is as easy as 1 - 2- 3
1 stick of butter
2 Egg Yolks
3 Tablespoons of Lemon Juice
Stir together the egg yolks and lemon juice in a small sauce pan. Slowly melt butter cut into small slices over low heat in same pan with the egg and lemon. Stir constantly until thickened.
For the Eggs Benedict you will need toasted English Muffin halves, Shredded or Sliced Cheese (your choice of flavor-I prefer Medium Cheddar), Poached Eggs, and Hollandaise Sauce from recipe above. I like to add Deli Ham Slices or Cooked Bacon Slices. I usually arrange as follows: English Muffin, then the Cheese, Meat if you like, then the Poached Egg, topped with a dollap of Hollandaise Sauce.

Waffles with pecan pieces and vanilla, lots of cut up fruit, real maple syrup, whipped cream, fried potatoes, bacon and sausage and orange juice and coffee.
Or as a second day, omelets with fresh cut peppers, homegrown tomatoes, small bits of onions and three fresh grated sharp cheeses, cooked with garlic and rosemary and a fresh made nutty bread or crunchy whole wheat toast with butter and plum jam, with orange juice and coffee. The omelette's can be Any kind of course, we just prefer that fresh thing, and sometimes even flavor the omelet with just the smallest squirt of lemon juice or lime.
I guess for brunch we have also had dried beef and hard boiled egg in cream sauce over whole wheat toast with fresh fruit and juice.. Some people have called that s...on a shingle, but we really like it no matter what its called. I've also seen Chinese dumplings and eggs seasoned with hot peppers and cheese sausage and potato casseroles. Mini pizzas, bagels with smoked salmon, cream cheese and olive, .....I guess you can serve almost anything for brunch. So enjoy.

Fruit, muffins, egg dish.
Actually, there is a really good french toast dish I make. You make it the night before.
8 slices french bread
2 (8-ounce) packages cream cheese, cubed
12 large eggs, beaten
2 cups milk
1 T. CInnamon
1 tsp vanilla
1. Remove crusts from bread, cut bread into 1-inch cubes. Place bread cubes in a well-greased 13 x 9 x 2-inch baking dish; top with cream cheese cubes.
2. Combine eggs, milk, vanilla and cinnamon in a large bowl, stirring with a wire whisk until blended; pour over bread/cheese mixture in baking dish.
3. Bake, uncovered, at 350*F (175*C) for 45 to 50 minutes or until set and golden. Serve immediately.
I served with maple syrup and blueberry sauce for a topping. Then they could choose what they wanted.
