Food that I could bring to work and eat for lunch and would not have to heat up.

the goveg website has a link to get a free cookbook from peta, i ordered it and looked through it and some recipies would probably suit your needs

I'm sorry, I forgot that you didn't want to heat the food up.

Take a papaya that is almost ripe, cut it in half, scoop out the seeds, fill with cooked rice and bean sprouts, put the papaya back together, and back at 350 degrees until the outer layer is a little soft. Yum!

Try some crackers with pepper jack cheese and olives.

You can also get veggie deli slices and bread and bring them to work.

I agree with the Vegan Lunchbox blog. She now has a cookbook with recipes based on the lunches she prepared for her son.

Yeah, just bring a block of tofu and eat it cold. That vegan enough? Easy, simple, cheap. Kind of like a vegan.
