I would like to make a nice kinda romantic dinner for my new boyfriend but I can't figure out what to make. Does anyone have any ideas? Please no sea food thanks! :)

Cook some small steaks, or even hamburgers. Remove them from the skillet, and add a few spoons of butter to the bottom, then deglaze the skillet with blackberry brandy. Let the brandy reduce until it's about as runny as pancake syrup, then pour the syrup over the individual steaks. This is inspired by "Steak Diane", and not nearly as difficult, but it's something he's never had, something he's going to like, and very impressive. If you have access to it, it's even tastier using venison steaks instead of beef.

Halve a small butternut squash, scoop out the seeds, and plop both sides, face down on aluminum foil on a cookie sheet or half-sheet pan for about an hour at 400F. Each of you gets one half, cut side up. You don't eat the skin, but each of you generously butters and salts the meat of your squash.

Buy some cooking apples, peel them and cut them into half-inch chunks. Open a can/jar of applesauce - I prefer Musselman's for this, but your taste buds may disagree - and heat up the applesauce for a half hour with the chunks of applesauce, then stir enough that you knock the edges off the chunks of the apple, and perhaps even break them apart. The idea is that the chunky applesauce tastes fresher, more rustic. Serve warm *with* the meal.

Nothing tops off the meal like hot bread. The late Lewis Grizzard wrote in his newspaper column that after being married three times, he always knew when the honeymoon was over. As long as she loved him, she’d make scratch biscuits, but when she switched to thwack biscuits (you thwack the can on the edge of the counter to open them) it was all over but the shouting.

3 cups flour
1 tsp salt
4 tsp baking powder
1/4 tsp baking soda
1.5 sticks cold butter, cubed
1 1/2 cups milk

Preheat the oven to 400 degrees. Sift all of the dry ingredients into a large bowl. Cut the butter into the flour, and slowly add the milk. Knead gently on a floured surface just enough to bring the dough together. If you knead or handle the dough too much, your biscuits will be hard and tough. Roll out the dough into a pad about an inch thick. Use a biscuit/cookie cutter to cut out biscuits, or shape into similar-size flat balls and place on cookie sheet. Bake for 12-15 minutes, or until the tops are starting to brown.

What's for dessert? Aerosol whipped cream. I recommend the recipe used by Herb Alpert and the Tijuana Brass (see link below.)

Since you haven't given any clues, except for no seafood, easy enough, I'm going to give you a suggestion based on where you want to take things after dinner. If you want to bloat him (and yourself) making something like potatoes or pasta will do it, plus the high starch content.... talk about snooze city once the candles burns out!!!! You need light, airy, fun and filling, without wanting to take an "after thanksgiving nap". My suggestion, a lighter fare, grilled chicken layered with alittle fresh basil, plum red tomatoes sliced thinly, and fresh mozerella cheese, then drizzle with some balsamic vinager and olive oil, a touch of salt and pepper to taste.... so good... make a side dish of some sort of rice, a small baked potatoe or baked yam, with a side salad of some sort. Pair it up with some candles, a light wine, and chocolate covered strawberries for dessert... you'll be fine... Good Luck... email if you need more specific's or have more clues as to what he likes.

Onion and Pepper Smothered Round Steak Pasta
1 pound mushrooms, stem ends trimmed and quartered
4 tablespoons olive oil
2 teaspoons minced garlic
Salt and freshly ground black pepper
2 1/2 cups leftover Onion and Pepper Smothered Round Steak
3/4 cup sour cream
1/4 cup finely chopped fresh parsley leaves
1 pound egg noodles, cooked al dente according to package directions

In a large skillet, saute the mushrooms in the olive oil until golden around the edges. Add the garlic, salt and pepper, to taste, and cook for 1 minute longer. Set aside.

Heat the leftover Onion and Pepper Smothered Round Steak in a Dutch oven until hot. Add the sour cream, parsley, cooked egg noodles, and mushrooms and toss until thoroughly combined and heated through. Serve immediately.

dessert:
Amaretti Ice Cream Dessert
16 amaretti cookies, crumbled
4 shots amaretto or other almond liqueur
8 scoops French vanilla ice cream
Whipped cream, in canister
1/4 cup or 1 (2-ounce) package slivered almonds

Crumble 4 amaretti cookies into each of 4 dessert cups and douse them with almond liqueur. Top with ice cream, whipped cream and almonds.

drink:
a nice lemon water would do.
an average sized cup will need approximately 2-3 lemon slices.

Well you can't go wrong with italian. Let's make chicken parm a fresh salad, and garlic bread. First, get some chicken breast rinse and pat dry. place in a zip bag or between saran wrap and pound them down as to make them semi-flat. After this get three containers and place in the first one flour, then 2eggs beaten, then in the last one plain dried bread crumbs, mixed with grated parmesan chopped fresh parsley. mix well.
Then with the chicken place in flour then egg then crumbs. add to a skillet of med-hot olive oil, and brown on both sides about 5min each side. may not be done but remove from pan. just enough oil to coat the pan 3-4 tbsp. Then place on a lined baking sheet for easy clean-up and topp with your favorite marinara sauce and sliced mozarella cheese bake in the oven about 10 min. @400 or until the cheese is bubbling brown. remove let rest 3-5 min. and serve with your fresh tossed salad and favorite dressing. As for the bread you can either buy it or make your own. the measurements i don';y know because i never measure unless i am baking but just use you better judgement. go by how it looks. remember you can always add but you cann not take away.

Aren't new boyfriends fun???? :) Here are some things to consider for that romantic dinner of yours:

1. How much time do you want to spend in the kitchen versus with your boyfriend?
2. Will there be anything the two of you can make together?
3. What are his favorites?
4. Are you a decent cook?

Once you've answered those questions, then take a look at a menu. Here's what most guys seem to like:

5. Something nice to drink: a great bottle of wine, Italian sodas (made with Pelligrino and Italian syrup); homemade lemonade spritzers (non alcoholic); and whatever you two have had in the past that you both love.

Possible menus:

1. Grilled ribeyes; sauteed mushrooms with butter and garlic; mashed potatos; chopped salad; brownies.
2. Roasted pork; sweet potatoes with a brown sugar and pecan streusal; fresh green beans; apple crisp and ice cream.
3. Chicken and artichokes (chicken breasts stuffed with artichoke, goat cheese, fresh thyme, bread crumbs and melted butter), with a white wine dijon sauce; wild rice pilaf; fresh green beans with lemon zest; raspberry sorbet with chocolate sauce.
4. Pot roast with brown gravey, mashed potatoes and roasted carrots, zuchinni, and mushrooms. Chocolate lava cakes for dessert.
5. Roasted chicken; stuffing; homemade applesauce with cinnamon apples; peas; and lemon bars for dessert.

The list goes on. Also, remember to light candles, play romantic music, and light a fire!

PARMESAN POTATOES

5 pounds all purpose potatoes
1 pound salted butter
1 cup Parmesan cheese
salt and pepper to taste

Peel potatoes (cut in 1 inch cubes). Boil potatoes for 10 minutes. Melt butter; drain potatoes. Put back in pan. Pour butter over potatoes and mix well. Spread potatoes evenly on cookie sheet. Sprinkle Parmesan cheese over potatoes.
Bake in oven at 350°F degrees for 35 minutes. Season with salt and pepper and serve.


GLAZED TURKEY BREAST

1 whole boneless turkey breast with skin (about 4 lb.)

RAISIN-APPLE STUFFING:

1/2 c. thawed frozen orange juice concentrate
1/4 c. juice
1/4 c. coarse grain Dijon mustard

Sweetened cranberry - sauce conserve, jellied cranberry sauce or all-fruit apricot or raspberry jam.
HEAT OVEN TO 350 DEGREES.

Open turkey breast like a book, skin-side down. Cover with waxed paper or a heavy-duty plastic food storage bag. Using a meat mallet or bottom of small heavy skillet, pound meat to uniform 3/4-inch thickness.

Uncover meat; spoon stuffing lengthwise down the center to within 1/2 inch of narrow ends. Bring up long sides, pressing down stuffing to cover. Tie in several places with kitchen string. Place on rack set in roasting pan.

Stir remaining ingredients in a small bowl until blended. Brush generously over entire rolled breast.

Roast 1 1/4 to 1 1/2 hours, basting 4 times, until juices run clear, met is tender when pierced and a meat thermometer inserted in center not touching stuffing registers 170 degrees.

Remove to a cutting board and let stand 15 minutes. Remove string and cut turkey into 16 slices. Arrange on serving platter.

Makes 12 servings.

PASTA PRIMAVERA

1/2 c. butter
1 med. onion, minced
1 clove garlic, minced
1 lb. thin asparagus
1/2 lb. sliced mushrooms (cut in 1/4 slices)
6 oz. cauliflower (sm. florets)
6 oz. broccoli (sm. florets)
1 med. zucchini, cut in 1/4 rounds
1 lg. carrot, thin slices
2 c. Half and Half
1 1/2 c. chicken stock
2 tbsp. chopped basil
salt and pepper
1 c. grated Romano cheese
1 lb. fettucini, cooked, drained

Vegetables may be prepared in advance and refrigerated. Heat wok or deep skillet over medium heat. Add butter onion and garlic and saute until onions are softened, 2 minutes. Mix in asparagus, mushrooms, cauliflower, zucchini, broccoli, carrots, stir fry 2 minutes. Increase heat to high. Add Half and Half, chicken stock and basil. Boil about 3 minutes until liquid is reduced. Season to taste with salt and pepper. Add pasta, toss with vegetable, add cheese. It is best to let pasta primavera sit in pot for about 30 minutes. Serve.

how about

White Sauce and Pasta

4 tbsp. butter
4 tbsp. flour
1/2 tsp. salt (or more to taste)
1/4 tsp. pepper
2 c. milk
1-2 tbsp. pesto (to taste)
1/4 tsp. oregano
3 tbsp. roasted pine nuts
1 c. shredded soft white cheese

Basic white sauce: in saucepan melt butter over medium heat. Stir in flour, salt and dash pepper. Add milk a little at a time stirring constantly to keep sauce smooth. Cook and stir over medium heat until thickened and bubbly. If you like it thinner, add a little more milk. Cook and stir 2 minutes more.

Add pesto, pine nuts and oregano. Add cheese stirring constantly until melted and sauce is smooth. Add anything else you'd like such as cooked veggies, shrimp or mushrooms.

Serve over hot cooked pasta. Linguine or even spinach linquine is nice. Light a candle. Enjoy.

MANDARIN ORANGE SALAD WITH SWEET AND
SOUR DRESSING

1/4 c. slivered almonds
1 tbsp. + 1 tsp. sugar
1/2 head lettuce
1 head romaine
2 stalks chopped celery
2 scallions
1 (11 oz.) can mandarin oranges, drained

SWEET AND SOUR DRESSING:

1/2 tsp. salt
Dash of pepper
Dash of Tabasco
1/4 c. oil
2 tbsp. sugar
2 tbsp. vinegar
1 tbsp. fresh parsley or 1 tsp. dried
Dribble of juice from mandarin orange can

Toast almonds lightly. Melt sugar in fry pan at low heat (watch!). Toss almonds until coated. Cool, break and store at room temperature. Add all dressing ingredients; shake and refrigerate.
Cut up lettuces in large bowl. Add celery, scallions, oranges, and all the dressing. Toss. Add almonds last.

4 Layer Cream Cheese Pudding Dessert
25 min 10 min prep

1 cup flour
1/2 cup nuts, chopped
1/2 cup margarine, softened
8 ounces cream cheese
1 cup powdered sugar
1 (8 ounce) container Cool Whip, divided
1 (3 1/2 ounce) package instant pudding mix (any flavor is fine)
3 cups milk
toasted coconut, to sprinkle (optional


Preheat oven to 350°.
Combine the flour, nuts and margarine.
Press mixture into a 13x9-inch pan.
Bake 10-15 minutes.
While cooling, combine the cream cheese, powdered sugar and 1 cup Cool Whip.
Spread over first layer.
Mix the pudding and milk; pour on creamy layer.
Chill.
Spread with remaining Cool Whip.
You may sprinkle with toasted coconut if you like
