STEAMED (RICE CAKE) PUTO

2 c. rice soaked in 1 1/2 c. water overnight
2 tsp. baking powder
1-1 1/2 c. white sugar
4 egg whites
2 tbsp. sugar for egg whites

You may use long grain.

In a heavy duty blender, puree soaked rice in water until very fine. Pour in a bowl; add sugar and 2 teaspoons baking powder. Mix well and set aside.

Beat egg whites until stiff. Add 2 tablespoons sugar to keep the air in the beaten egg whites. Fold the egg whites into the beaten rice batter and pour into muffin pans. Steam for about 20 minutes or until done. Optional: Sprinkle a few anise seeds on top of the puto. Serve with grated coconut.

Note: You may use basket steamer in a wok half filled with water.

PUTO

1 c. rice flour
1 stick butter
3 eggs
1 1/4 c. sugar
2 tsp. baking powder
1 c. Bisquick
1 (19 oz.) can coconut milk
1 tsp. vanilla
1/2 c. milk
1/2 tsp. salt

Mix all the ingredients to form a batter and pour in a deep baking pan (round) 2/3 full and cook in a steamer for 45 minutes.

FILIPINO PUTO MAMON

Ingredients:

11/2 c. rice flour
1/4 tsp. salt
1/2 c. milk
1/2 c. water
3 tsp. baking powder
1 tsp. vanilla
3 eggs
1 c. sugar

Method:

Separate yolk from white. Cream salt with yolk and add sugar slowly until consumed. Combine milk and water. Add flour and milk alternately. Beat egg white and fold with the batter. Steam for 15- 20 minutes. Do not grease muffin pan.

From where did you get that word? if somebody who speaks Spanish gave it to you, that person was kidding you. In Spanish is a bad word.
