Creationists say that they believe the Bible told the truth when it said the universe was created in 6 days because it says so in the Bible.
I have a hard time believing in anyone who actually operates under that kind of circular logic.

Nope. There's no scientific evidence that we've discovered yet that tells how long it took. We haven't even found evidence that the universe was created. The fact that it is here doesn't mean that it wasn't ALWAYS here. The future appears to be infinite, the past might be too.

It befuddles me that people try to measure or prove something SUPER-natural with natural methods. Has anyone ever been able to prove how life (= something supernatural since man did not create it) started and is maintained in ANY organism? From where did life of anything originate? No one can give a scientific explanation. But because there’s no scientific explanation, can we deny that life started somehow?

In Quran also God says that he created world in 6 days using the word 'Yoam'. In Arabic Yoam means a day and also a period and period can be of any length.... five, ten, million years or billion years. Also God says in Quran that God's one day is equal to 10,000 years of earth; at another section of Quran it says God's one day can be equal to 50,000 years of earth.
Based on these various definition of a God's day, some scholars say may be When God says that He completed this universe in 6 days, He could be meaning many millions or many billions of years.
May be scientists will some day find the correct age of planet earth. Sciences are also made by God. Scientists only discover the scientific facts and some day or thousands of years later they may have the right answers of some puzzles.
When God wants He guides scientists also to find certain things when it is appropriate time to be found for the benefit of mankind. God guides any one He works hard to find. Person whom God leads to the right answer can be athiest, Hindu, Christian or Muslim.
In Quran God wrote in a very simple and easy to undersand language where He has written commandments to be understood and obeyed by all believers...I means DO'S and DON'TS'.
But in many places God has used words which has too many meanings and they all could be right. That has made very difficult to understand the real meanings of the words. Most scholars think God challenges this way to all believers to comtemplate, think and search very hard to find the right answers. And no one really knows answers of some of the words God used in Quran, like He says I have made seven skies. No one understands what kind of skies are they. God did not explain about soul even to his Messenger Mohammad. He said I wish God had told me, so I could answer the questions of people.

The only thing I've heard mentioned is that there's not a cycle of 7 to be found anywhere else in the universe. And isn't that odd?

We know the universe is about 13.5 billion years old; take CMB radiation, for example.
We know the earth is about 4.5 billion years old.
We know the biblical creation story is wrong (plants existed before the sun? come on).

it's either you believe it, or not. if you believe it, there's no need for evidence. if you don't believe it, evidence won't make much of a difference.
but if you really want evidence, read the book of the Bible, Genesis.
