I bought some of these the other day for the first time and was wondering what the best thing to do with them was. Anybody got any nice easy recipes they'd like to share?

Here's a great one that tastes really good, if you like the flavor of garlic.

Rinse your mung beans in cold water and pat them completely dry with paper towels.

Put some Olive Oil and a couple of finely chopped garlic cloves in a pan. Saute the garlic until light brown. Put in the beans and stir fry for one minute. Remove from pan and eat as a vegetable dish.

Yummmmmmmy!

You can make a South-East Asian dessert by first boiling the beans until they soften, add palm sugar (or brown sugar as substitute), sago or tapioca pearls (soak for a few minutes first), coconut milk and cook until the pearls become transplant. Add water if necessary. The end result is a slightly sweet soupy yummy dessert.

if you soak them and let them sprout, you'll have the same type of bean sprouts you can buy in the stores.
