I've caught a number of fish in the ocean which had old rusty hooks inside them, and even one which was in the process of passing the hook out of its anal vent. (While thin wire "bronzed" steel hooks will rust out in saltwater in a few days, the thicker, chrome or nickel or zinc plated ones last a lot longer.)
Basically, it's a question of how much damage the hook has done before you cut the line. Once the tension is off the line (that is, the line is cut or broken), the fish starts to heal. In some, the hook remains embedded until it rusts away; in others it can come loose and pass through like a piece of shell or something. (Fish eat a lot of hard, sharp things, like shellfish, crayfish, spiny fish with spines, etc., so their systems are used to such things.)

Cut the line as far back into the fishes mouth as possible then let it go. Most hooks will dissolve in a matter of months with little damage to the fish. Believe it or not I have caught many fish that have had hooks in them in various stages of decomposition, all of which were healthy, I found the hooks only by filleting them.

The fish has a better chance of surviving if you cut the line as close to the hook as possible and release the fish. Although if you are keeping any to eat the one that is gut hooked should be one that you keep.

If you cut the line and release the fish, in saltwater the fish will survive. In about one week, the hook will disintegrate into small pieces.

It'll be fine if you cut the line before it struggles too much. Yes, the acids in the gullet will dissolve the hook in a short time.
