You should use two forks to shred the chicken for dip after you cut it up across the grain at reasonable lengths so it is not stringy.

I find my fingers shred boiled, cooled chicken the best.
But if you haven't already bought your chicken, you should buy a rotisserie chicken, cool it, and shred that. It will lend a great flavor to your dip. Grilled, bbq, etc.

I use 2 forks to shred chicken. Use them to "pull" the chicken apart. I also use forks to shred pork...same method behind it. In effect, you're pulling with the grain to separate the fibers.
If they're too long, I chop it some after it's pulled.

Get boneless skinless chicken breast and boil it until it is tender... I forget how long for though. You can also buy it already shredded at the store in the freezer section.

If you have kitchen scissors use those. You will be able to get consistantly fine pieces for your dip.
