Yes!!I do it all the time. In fact, I don't use vegetable oil at all anymore. Just a week ago I made boxed brownies with olive oil, and they came out great! Just make sure the olive oil isn't flavored. I've had friends make brownies with garlic olive oil before...and needless to say, that didn't turn out well.

Yes , but if it is flavored Olive oil it will change the taste of what you cook.
Good idea to change to Olive oil though, as it's much better for you:-)

Yes. Try extra virgin olive oil. It's not stripped of all the nutrients.

Carrot cake has adequate different solid flavors in it (the spices, the raisins, the nuts, &c) that the flavour the olive oil could impart would be un-noticable, so specific, you're able to be able to desire to alter it. i does not use it in a cake with an exceedingly mushy style (alongside with an almond cake or a white cake) because of the fact you're able to be able to over-capability the state-of-the-paintings almond or vanilla style of the cake. while you're making cake from a mix, and are seeking to make it extra healthy, you are able to replace the oil with an equivalent quantity of applesauce or canned pumpkin. (Pumpkin may well be quite solid in carrot cake!)
